In my veg box I have . . .

(amongst other things) a red chilli pepper, a clove of garlic and root ginger.

Now, I feel it wants me to make a curry, or something similar. Trouble is, I've no idea where to begin. Any suggestions?

Fry chopped onion with chopped garlic, ginger and chilli. If you have it, add turmeric, ground cumin and ground coriander. Season with salt and pepper.

Add chopped meat of whatever persuasion you prefer. Stir till slightly browned, squeeze in juice of a lime/lemon and any other veg you want to add. Simmer for 40 minutes/until cooked. Stir in chopped coriander just before serving.

no no, not curry.

Obtain some nice prawns, and stir fry them with the chilli ( deseed if you don't like it too hot), garlic and ginger. Add the juice of one lime and some honey to taste. Serve on egg noodles.

If you like aubergine, don't see why not! You could just make a veggie curry.

a thai curry with aubergine is delicious...
get some lemon grass make a paste with your other ingredients, fry with some onion, add cubed aubergine and whatever else you fancy..pour in some coconut milk. serve with rice..yum

And don't put aubergine in anything. Aubergine only really goes with marrow, and it goes best in the bin.

Actually I'm not sure about aubergine, but that's the joy of a veg box, it's vegetable roulette every week.
I like to think I like the challenge
Ta for all the ideas, I'm quite a "meat and two veg" cook, so need some help to go all exotic like.

For aubergine:

Slice thinly lengthways
Fry each slice till golden (will use lots of oil) or griddle until charred on each side
Make a tomato sauce - diced onion, softened in olive oil, tinned tomatoes, salt/pepper and oregano/fresh basil and lots of garlic
Layer aubergine and tomato sauce, then sprinkle generous handful of grated fresh Parmesan on the top and/or slice mozzarella.

Bake in the oven till the cheese is browning.

Sometimes alternate aubergine layers with griddled slices of courgette.

Aubergine curry is excellent!

One good idea is to bake the aubergine for 40 minutes first so it goes all squishy & smokey, then chop & add to curry towards end of cooking time.

But I'd use your spicy stuff for SmugColditz's prawns tbh, & make the veg box curry with Patak's paste instead...

Colditz' prawns sound absolutely lovely, but fussy dH just won't eat them. Might have to keep a wee bit of the spicy stuff and make a mild version for me and the kids one night I send him he happens to be out.
Ta for aubergine ideas too, it's actually starting to sound quite appealing! Although I'd have to fry it in butter not oil. I think I'm the only person in the world who doesn't like the tast of olive oil [shudders]

it doesn't have to be olive oil does it? not a big fan either. i use canola or grapeseed oil.
