What are your ideas for food for 12 Sunday that’s less stress ?

Is this an Easter Sunday lunch?
are they expecting traditional ? What about cooking up a couple of meats, a large silverside and a gammon as they are easy to carve. Serve with some new potatoes, crusty bread and salad

I always think a roast is an easy meal. You can prep the veg and make Yorkshire batter the night before and the table can be laid and all vegetable dishes and gravy boats taken out ready. Just put the meat in early to cook then leave to stand for an hour in foil before carving. I'm doing beef and a gammon. Once they are out from the oven the huge tray of roast potatoes and Yorkshire puddings can go in. Switch on veg on the hob. I'm doing carrots, swede, peas and broccoli. I'll make the gravy from meat juices and add gravy granules, stock cubes, milk and wine for a smooth tasty gravy. I'm buying a Morrisons apple pie and a cheesecake for dessert. I expect there to be cold cuts of meat leftover for sandwiches on the Monday for lunch. I enjoy cooking and family will be in and out of kitchen chatting to me. DH preps all vegetables, makes Yorkshire batter and lays the table the night before.

An even easier meal is a slow cooker stew. Put it on day before then just reheat.

I'd do gammon and a whole salmon providing everyone eats meat and fish. New potatoes and a variety of salads.

A trifle and a chocolate or lemon flan and a bowl of mini eggs.

I’d probably do a casserole or two or gammon and maybe cauliflower cheese with pots.

Maybe a roast, I’d need another yorkshire tray to do them for that many though. Having said that, I have made in advance and then reheated, they were fine.

24 hour slow roast pork. Put it in on low Saturday lunchtime. It emerges super tender. Go traditional and serve with Dauphinoise potatoes and green veg.

Or go relaxed and shred the pork serve with rolls and salads and everyone helps themselves.

Orange and polenta cake drizzled with chocolate and served with creme fraiche.

I’ve bought a load of lamb and beef koftas, and falafel for the vegetarians. Shall be serving them with flatbreads, feta couscous, minted cucumber salad and raita.

I would roast a leg Of lamb or two. Currently on a good deal with Clubcard at Tesco. Roast potatoes. Leeks in cheese sauce made in advance, carrots in maple syrup and whole grain mustard, peas and broccoli and would make a couple cold puddings,chocolate mousse, lemon posset, meringue roulade.

12 is a lot of people, I suppose multigenerational so different diets and preferences.

Things you can prepare in advance:
2 large lasagne, one traditional and one vegetarian (spinach and ricotta, I make asparagus or pesto)
A gammon to serve cold. Salmon if you’re fancy. Cheese and crackers.
A variety of salads. I like shredded fennel, carrot and celery salad (sort of coleslaw without mayo).

A sandwich platter for kids. Chocolate rice Krispy nests with mini eggs.

Cake and/or dessert. I’ve never had Simnel cake as we’re not fans of marzipan. I usually get the kids to make tiramisu the day before (raw egg alert) but this year it’s Summer pudding with strawberries and frozen mixed berries. It has to be made in advance, is always a hit, and is vegetarian friendly. Serve with or without pouring cream.

So you only have to prep the veg and roast (I’d do 2 large chickens, depending on budget).
Aunt Bessie’s Yorkshire puddings are fine.

A roast. A leg and shoulder of lamb. Roast potatoes, honey glazed roasted carrots and parsnips and a green veg. V easy only faff at end is gravy. Make a pavlova or cheesecake in advance or buy from cook shop.

Another vote for roast. When I've had that many at Easter I did a lamb leg and a chicken.

We're having lamb madras this year (made with whole lamb leg), Bombay style roast potatoes, Keralan beans (and carrot pakoras if I can be arsed).

Quiche and salad and potatoes of choice. Victoria sponge and fruit and cheese.
