I work nights - any suggestions for a dry muesli type breakfast that I can make & take with me?

I work a minimum of 3 nights a week & at the moment I'm having my breakfast when I get home, but this means even more chaos than normal & time is a bit tight. I need a healthy breakfast otherwise I'm crabby for the rest of the day but can't take milk with me to work so it needs to be something like a bar maybe? At home I have wholegrain muesli with extra seeds/nuts and no salt or sugar (which makes me sound really healthy until you see what I eat the rest of the day!)

Has anyone got any ideas? Ideally something that I could do once in a while and freeze or store in a plastic box? My mum used to make a 5-cup cake which was easy & yummy, but one of the cups was sugar, so not quite what I'm after.

Banana muffins? Or a granola-type baked cereal with lots of nuts and seeds in it that you can pick at? Lucy Burney has a lovely one called 'Mummy's muesli' in her book and I would be happy to eat it dry (in fact I often do).

The problem with cereal bars imho is that they need something to stick them together, which is usually very fatty and sugary. I haven't yet found a recipe which makes delicious cereal bars that stick together but are also low in sugar.

What about birchers (sp) style porridge? You mix apple juice, yogurt and fruit of your choice (or choose a fruit yogurt) with oats in the evening, and then take it to work in a pot. The juice makes the oats really tender, and the raw oats are a really good slow release food.
