Best 'Credit Crunch' Dinners?

In effort to spend less & eat less I had tinned peeled plum tomatoes, scrambled egg & toast for my dins last night & it was YUM.

Anyone else discovered cheap tasty meals?

Chickpeas with some fried onions and surry spices with loads of greens chucked in to wilt.

Buy a whole chicken and roast it yourself. You can usually get at least three meals out of it if you pick it clean and use the carcass for chicken stock.

Veggie soups of all sorts are always a good deal - tomato & rice, ministrone, curreid parsnip etc etc etc

I usually make a big vat of veggie chilli to freeze and eat with rice or on baked potatoes - we got loads of meals out of it and it probably costs less than £5 to make.

I also made the spicy bean burgers last night from MN recipes (sorry can't remember who posted it) which were very cheap and delicious.

How about starting a thread for everyone to add to when they find a shop/supermarket that has current good deals going on instore? we could all take advantage of it if we want to that way.

Brocolli pasta is a great one for cheap. Veg soup, Tuna fishcakes made with tinned tuna.
Cornbeef stew and dumplings can feed 4 humgry people on under £2.00 if your clever!

Chicken thighs are always a good price and are a tasty part of the bird too. Curries are a favourite, but I use it for anything at all.

Can buy belly pork usually on the butchers' counter at Tesco. I buy it in a whole piece, take the skin off, sprinkle the meat side with chopped garlic, lemon zest, chopped chilli, oregano, salt and pepper, then roll it up, tie it, and roast slowly till it's meltingly soft.

Gorgeous, and really cheap.

Fry mushrooms & leeks in little oil or butter or marg, smash/mash some potato (mix white & sweet potato if you like) chop up some ham or bacon, put in a dish sprinkle with any type of cheese, bake for 20 mins.

Serve with steamed greens.

oh yes pork belly slices are lush with some ketctup manis (soy sauce) on them to marinate just b4 putting in oven and then roast at 200 for 45 minutes.......mmmmmm heaven
