Bread pudding recipe

Has anyone got a decent bread pudding recipe please?

My late granny used to make an absolutely delicious one, but the recipe was in her head and very much just thrown together - as it probably should be!

Greggs used to do a very decent one, but it fell off the menu a few years ago!

I'm looking for an old fashioned, stodgy, heavy kind of bake. I've followed one from online before, but it was far too light and had an almost custardy consistency, even tho it was definitely a bread pudding, not bread and butter pudding recipe I followed.

I thought I had posted on here before looking for a recipe, but a search didn't find anything 😬

It sounds like the writer of your recipe was mixing up B&B pud with Bread pud.

This is pretty close to what I do, but I don’t use the butter. BBC Good Food.

My Granny's recipe (so sorry it's not metric!)

1lb stale bread
3oz shredded suet
6oz currants
4oz sultanas
3oz brown sugar
1 egg
4 tbsp milk
pinch nutmeg
1tsp mixed spice
1tbsp castor sugar

Soak cubes of bread in cold water for 40 mins, then drain and squeeze dry. Mix with dry ingredients. Beat in the egg and milk. Pour into tin and bake for 2-2.5 hours until top is golden on Gas mark 5. Sprinkle sugar over and eat hot or cold.

It was definitely a bread pudding recipe but it was nowhere near stodgy enough. I saw that one, and was going give it a go. Thank you

My Mum used to soak the bread in water then squeeze out but I could never be bothered so I just use the Delia Smith recipe.

But bread pudding should have so much mixed spice that it's a bit dark, 2 tsps is no where near enough! The Maltese side of my family would also add a couple of spoons of cocoa powder, you couldn't taste the chocolate but it somehow adds a bit of richness.

Thank you. Cant fault Delia! Yes it definitely needs to be dark!
