risotto done properly is fabulous and not bland at all.

DH does the most delicious butternut squash, pancetta & pine nut one, it is DIVINE

Oh crikey, there have been risotto threads before.

Risotto is a fantastic dish but it is really difficult to make. The people who don't like risotto are, in all probability, not good at making it...

The one I linked is great as it's really low fat - no butter or cheese needed and is surprisingly tasty. Dh loves it.

Cous cous is fab, but it must be made with a decent stock (not hot water on it's own). We have it cold with cooked mushrooms and peppers and a chopped spring onion stirred through. Add a little olive oil and balsamic vinegar, season to taste and chill. Yummy!

I love risotto. Usually do chicken 'n' something or a lovely red wine and sausage one.

I have read that Jamie Oliver recipe 3 times and still don't understand it.

Why are there 2 lots of rice? and 2 lots of stock?

I make risotto often but am feeling lost here????

Risotto is the only thing I can cook better than my dp, and I love it. Had a nice chicken and chorizo and pea one for lunch today.

dunno. a chunk. prob 25 g. and more parm. i also fling a parmesan rind in when i'm cooking it. although imo good risotto starts with good stock, so if you don't have that it's going to taste of cube and there's nothing you can do about it. (mind you, i quite like a knorr chicken cube).
