Freezing fresh veg

Do I freeze the veg raw

or

Part cook then freeze

or

Cook then freeze ?????????

I wanted to put small portions of prepared veg in the freezer for my 10mo so that I've always got fresh veg on hand that is quick to do for him.

But I would partially cook it, I think.

Was thinking of broccoli, carrots, green beans, broad beans, cauli, mangetout, mini corn, parsnips

We get a veg box delivered once a fortnight and thought this would be a good way of putting some aside for DS, so that he is not eating the same veg for days on end.

Right, Zeeky.

I have a great little (very old) book from Ebay called A-Z of Home Freezing by Mary Norwak.

The advice in there, is to blanch your veg first. With cauliflower, add juice of 1 lemon to the blanching water to keep it white.

yes blanch them first,throw out onto a clean cloth or tray and leave to dry and cool before you freeze. With green beans, I tend to chop them before I freeze them, unless you prefer them whole. You could prepare carrots etc. too in this way then when you're ready to eat them you can just heat and eat.

With bought stuff you need to blanch it - if its straight out of the garden theres no need.

If you want free flow veg then chop, blanch and then freeze on baking sheets, then transfer to bags
