Meringue/forced rhubarb

So, I’ve got a crop of forced rhubarb and keen to make some meringues. Shall I put the two together? Anyone got a failsafe recipe? I’m not the best baker.

Or shall I stick with a crumble/cobbler with the rhubarb and make some meringue nests. In that case, any simple meringue recipes?

I’ve had a crazy week and looking forward to doing some pottering and baking so all ideas welcome. Thank you 🙏

I cook them separately as individual pavlovas.
Stewed rhubarb (with ginger if you like) spooned over meringue disks and topped with cream. Crumbled ginger nut biscuits on top of you've used stem ginger in the rhubarb.

Or I just go old school and make rhubarb crumble.

4 medium egg whites, ideally on the older side and at room temperature. Whip slowly until foamy then on medium speed until fairly stiff peaks.

Mix 225g of caster sugar with 1/4 tsp of cream of tartar. Gradually add to the egg whites a bit at a time. They'll go glossy as the egg whites turn some of the sugar into syrup.

Pipe or spoon into your choice of shapes and bake at 120⁰C for 30-45 minutes depending on your oven (mine takes about 35 minutes)

Turn off the heating and don't open the door until it's cooled down, otherwise your meringues are likely to crack.

You'll need to experiment a bit with thickness of piping and timing with your oven to get the level of gooey you want.

I have poached plums before then put them into a clear glass dish and spooned meringue over the top. Into the oven until golden brown. When you put the spoon in, pink juice spilling over looks glorious.

Rhubarb should work just as well and look just as beautiful.

James Martin did some nice things with rhubarb on his programme this morning. It's repeated tomorrow morning. He served it with a lemon syllabub which looked delicious.

Thank you for this thread. I made rhubarb fool and then crumbled in some very nice locally made meringues I bought for Christmas and couldn't eat at the time because I got that weird flu type bug. The packaging alleged they were best before some date in December, but they tasted fine, and if I die someone will bury me.
