I have tried various recipes for coleslaw and all have been a disaster! Does anyone have a failsafe recipe they would be happy to share. Thanks in advance.

OP,there are endless variations. Cabbage should be shredded very finely(veg peeler is good for this)

I give it a sprinkle of salt and bruise it with my hands.

Then finely chopped onion(not too much)
grated carrots
grated apple

Add some mayo,mild mustard and natural yoghurt(only enough to bind the veg/fruit together).

Might need a splash of vinegar and a sprinkle of sugar.

Lacto/dairy free version: use oil and vinegar

Get a mandolin for the fine shredding. I think it makes all the difference to have the veg really fine. It improves the mouthfeel, the blend of flavours and the sauce/veg ratio when you mix it.

I hate biting down on a big chewy lump of cabbage that doesn't have enough surface area to be tenderised or lubricated by the mayo/yoghurt combo.

Everybody is mentioning 'finely shredded' cabbage but forgetting (me included) to talk about taking out the woody stem before shredding only the leafy bit.
I try to do fine slicing but don't worry about it too much. If any of the finished product looks a bit coarse then I just set about it with the kitchen scissors!

I shred the veg in advance and leave it to soak in a bowl of cold water for a few hours. It really crisps up the veg, no chewy bits here! (it also increases the volume so it makes sense economically, too). Make sure that you dry it thoroughly before making up the coleslaw.

That's just water from the veg. Homemade coleslaw is best eaten reasonably quickly tbh.

I'd leave out the onion and mayo altogether, and do:

shredded cabbage
raw beetroot
carrot
not-too-ripe pear or apple

Dressing: olive oil, vinegar, bit of wholegrain mustard

Sesame seeds or walnuts scattered on top

2 tablespoons dijon mustard
2 tablespoons cider vinegar
3 tablespoons sugar
1/2 teaspoon salt
1 teaspoon onion powder
1lb sliced white cabbage
2tsp caraway seeds

It's American style and it always gets eaten. Food processor the cabbage for ease. It keeps for two weeks plus in a sealed box in the fridge. It pickles it a bit and the cabbage gets softer and it gets somehow tastier.

I don’t add any onion. A very family friendly version is just white cabbage and carrots, with a mix of mayo/salad cream/small amount of double cream. That’s lovely and tangy and creamy all at the same time. Always goes down well.

Coleslaw with 3 tablespoons of sugar?! Bloody hell. Why not just grate a Mars Bar on top and be done with it.

I find it strange you are more concerned about the sugar content then the huge amount of calories from the mayonnaise. It's coleslaw, a serving is a tablespoon. Oh wait, Mumsnet competitive under eating. Carry on.
The sugar has purpose in the recipe. I find it odd to pick that out especially when it is so obviously paired with vinegar and I said it had a pickling effect.

Nothing to do with undereating. Everything to do with the unhealthy American urge to add sugar to everything. Sugar is empty calories and is addictive. At least mayo has some nutritional content.

Too be fair, I think if I grated Mars Bar on my coleslaw I might finally get my kids approval…
