How dl you roast your carrots for Sunday lunch?

Instead of boring boiled carrots might trying roasting long cut ones.

Never done it though...ideas please?

I slice them into thin batons and put them in a foil parcel with a blob off butter, a dash of lemon, salt, thyme and a good punch of cumin seeds.

Wash, chop ends and in half if large, put in roasting tin with oil and seasoning roast for about 30 mins hot oven

top, tail, cut and coat with a teaspoon of oil.

Into the oven at 200° for about 15 mins, delicious

I’d like to try roasted carrots, but DH has prepared the veg same way as he’s done for over 40 years, we have roasted parsnips in honey though.

Peel slice lengthways and then add olive oil, honey and either fennel or caraway seeds and sea salt, usually add some parsnips as well.

Maple syrup works too. Chop them up and then mix them with oil and maple syrup (use your hands so you get a decent coating) and then roast them

I roast in oil annd seasoning and add honey for the last ten minutes - stops the edges burning too much at the end. Also nice with butter, thyme and citrus juice over, usually an easy peeler, with salt and a little honey the end.

I mix garlic, olive oil, honey, seasoning and leave the batons to marinade for a while and then bake them. Much nicer than plain old boiled!

I put carrot batons, chopped chunks of onion and parsnips into an ovenproof dish, splash of olive oil and sprinkle of sage. Throw in a couple of cloves of garlic too if you fancy it. Toss it all around so that everything is covered and then place uncooked, stuffed chicken on top. Foil over the lot and cook as normal. The veg is delicious and there’s plenty for leftovers during the week.

I don’t roast I do them ‘vichy’. Add a good knob of butter and dessert spoon of sugar to water that just covers the carrots. Simmer to reduce the liquid until it’s almost all gone (add a splash more if they look like they’re catching) - usually takes about 30min. Beautifully soft, sweet and flavorful.
