Bored with Breakfast

Just that really, I cycle the same breakfasts again and again and wish I could think of something new. I find it much harder than any other meal for variations. Partly because certain things just don't feel like I could eat them 1st thing, eg fish. Partly it's a slightly more rushed preparation time than dinner.
I don't eat meat, but will have eggs and dairy. I want to get protein at breakfast to meet daily target so simply toast or cornflakes isn't much use.
Usually have:
Eggs - scrambled boiled French toast poached omelette etc
Porridge with fruit
Occasionally baked beans on toast
Yoghurt (eg Skyr) with fruit
Pancakes with protein powder
That's it ... so dull!
Any ideas I'm missing?

make egg frittata bagels - sheet pan frittata made with 250g eggs white ( from carton) and 3 eggs, add sun-dried tomatoes and herbs. Then cut into 6 and place in each bagel, top with smoked cheese slice, wrap in tinfoil, place in airfryer as needed for 10 minutes or oven.alternatively instead of smoked cheese add feta to the frittata

I've got a lovely pumpkin and feta frittata - my recipe has bacon, but google has heaps that are meat free.

I'd google frittatas as you could make on the weekend and freeze, then reheat gently in an air fryer.

There's always the classic zucchini slice that's egg based.

I used to get a lovely french toast at a patisserie - it was two slices of bread with some sliced camembert and tomato relish in the middle. Might be a nice occasional treat or just plain french toast.

I’ll quite often roast some veg and reheat in the week to have beside poached or scrambled eggs, some seeds, some chilli sauce, coriander, avocado. It just changes it up a bit.

adding stewed fruit to porridge.

Turkish eggs

Add lemon and fresh crack black pepper to Greek yogurt and top with warm garlic chilli tomatoes or garlic mushrooms

Breakfast burritos/burrito bowls - beans (black/mixed/refried), egg, veg, rice if you want the carbs, cheese if you like it. Add salsa, sour cream, guacamole to your preference.

Oh, thanks all! Some really great suggestions here. I'm going to do The Big Shop tomorrow so I will stock up on some ingredients and try a few of these, yes I think it will help to prepare in advance so that I don't just fall back on the usual staples.

One problem I have is just not being that hungry in the morning, but if I don't have protein, it's hard to get my full 80g later in the day, plus I might snack mid morning. So it's finding ways to make it easy to eat.

I've recently got into overnight oats having previously loathed every version I've ever tried. I make them with nice yogurt, a bit of milk, fruit and lots of bonus bits - you could use Skyr or add protein powder for additional protein. These are my favourites - I use 40g oats and 50-75g yogurt per portion depending on how much I have and then add a bit of milk
until I get the consistency I want:

Grated apple, cinnamon and vanilla yoghurt

Vanilla yoghurt, cherry compote layers up and topped with flaked almonds

Tesco Finest hazelnut yoghurt and a couple of tsp of hot chocolate powder layered with fresh raspberries

Lemon curd yoghurt, layers with drizzles of lemon curd and fresh blueberries

The last two especially are really good.

What do you eat at night? I WFH and often have lastnights leftovers for breakfast.

These fritters are so versatile. You can add sweet corn, curry powder, onion and all sorts. I make a batch and its 30sec to reheat in the morning and eat with a fried or boiled egg on top. They also freeze well.

Shakshuka keeps really well in the fridge in a glass container. Just scoop out a portion and crack in an egg of a morning.

I never have but thinking about it, it would also freeze in portions well.

Overnight oats that I do are vanilla yoghurt, frozen raspberries and oats (& a spoonful of chia seeds if we have them) - easy and really good.

I forgot a few more. When we were in Crete, other than the usual breakfast offerings, they'd also have grilled veg- courgettes, tomatoes, peppers, cut into halves or quarters then grilled with feta or other cheese on top. Then a sprinkle of oregano. Simple, but delicious.
