Looking for inspiration please! What types of homemade soups does your family enjoy?? I have a batch of fresh chicken stock to use up.

DH is asking for potato & leek. Which is OK but a bit boring IMO.

I like minestrone but the DC aren’t keen - too many beans and vegetables apparently!

what does your family like?

Carrot & Coriander is a firm favourite. Minestrone, Roasted tomato & Thyme, Parsnip, leek & potato, curried butternut, chicken noodle

I'm a big fan of a noodle soup with chicken stock and can be very versatile with whatever you have in the fridge - chuck in aromatics i.e. cinnamon sticks, star anise, garlic, ginger, soy sauce, five spice if you have it, noodles, any other veg you have lying around but diced carrots, peppers and sweetcorn work well, add any left over chicken too, fresh spring onions on top if feeling fancy

If I have homemade stock then I use it for something where you can really taste it - generally a clear soup like Asian noodle soup, tortellini in brodo, chicken and rice, pearl barley and veg. Or risotto.

For blended veg soups or tomato based soups I tend to use stock pots as you can’t taste the home made as much! My family loves Thai butternut soup or spiced carrot for example but these are stock pot ones for me.

-curried parsnip soup
-pea and ham. I buy a smoked ham hock/knuckle and 2 packets of the quick soak peas. Not the bigga peas but the quick soak ones. Soak as per instructions, then add the ham and whatever veg I have. Onions, potatoes, carrots, swede, celery etc. It comes out quite thick, but can be thinned out of preferred. I don't add any salt/stock because there is enough flavour from the ham
-Ox tail soup, again with lots of veg. Beef shin or skirt also goes well because they all need long, slow cooking

I make my soups out of whatever veg is slowly turning soft in the bottom of the fridge. It’s different everytime, and always has onions in it, but they always turn out ok.

This is one of my favourites and is being made later on today to hopefully stave off the horrible cold I’m coming down with. I often swap out the giant cous cous for orzo or similar pasta.

We do a lot of ramen, so using chicken stock with miso, ginger, herbs, fresh veg, chicken or prawn or tofu over noodles with lots of fresh toppings.

Or chicken tortilla soup, similarly with lots of toppings.

Turkish red lentil is easy and delicious and (look away if you’re a traditionalist) a great foil for extra protein. I like to poach an egg or a bit of white fish in it when I fancy something more substantial.

I usually make soup from what's in the fridge and we just call it yellow, orange, red or green soup so they have a fair idea what it's based on! I usually roast the veg with garlic and some sort of chilli powder. Did a really easy one the other day.....soften leeks and garlic, add a tin of washed butter/cannelloni beans, tin of good toms and chicken stock. Simmer for 30 mins and blend. Might put red lentils in next time as well.

I forgot one- chicken sweetcorn soup. Similar to the Chinese restaurants.
I always make it a few days after a roast chicken. I add soy sauce and some sesame oil to mine and never added parsley over the top! I suspect that was supposed to be spring onions.

courgette
cauliflower & gruyere
roasted red pepper & tomato
chicken & veg
chicken & sweetcorn
carrot & coriander/cumin
Broccoli & stilton
ham & pea

so many options, depends what I have to use up!

Leek and potato, French onion (but I prefer the entire thing to be blended, rather than boiled onion rings in stock), and curried parsnip soup, which is on the menu for tomorrow!

However, I have been informed that I should just call most of my homemade soups 'garlic soup', because I always throw in extra!

We like roasted carrot with coconut milk, ginger and cumin soup. Also spinach and potato soup, can be with ordinary spuds or sweet potato .
I do a general vegetable soup of whatever I’ve got leftover, and then a minestrone that DH likes which is quite substantial with bacon and beans as well as the usual vegetables. But we always come back to tomato soup, made with skins on roasted tomatoes.

Made potato and leek today, so quick and easy. I’m partial to chicken noodle soup or my own chicken, noodles, cabbage and spring onion recipe with soy and chilli. I make a tomato and bean soup and a lentil vegetable, both use a soffrito base which I make in big batches and freeze into portions for easy soup making
