I made a vegan dish from Meatless Farm, which was made from soya mince. It's a high protein dish with soya protein 29%. Very late on Monday night (19th Jan) I cooked it with onions, some garlic, tomato purée and tinned tomatoes. I cooked the whole 350g packet , ate a third of it, and then put the rest into airtight "Chinese takeaway" plastic containers. Yesterday evening (the 20th), I asked two ladies and they seemed to say it was fine to reheat completely and use again. I had intended to put the containers outside in my communal hallway (temperature about 12 centigrade) for about one hour to cool quickly, but I fell asleep on the settee, and so it was almost 6 hours before I actually put the containers in my fridge. However, when I looked on Google AI they cited this strict 2 hour rule which says it can only 'sit out' for a max of 2 hours before putting it in the fridge - especially as I said I'm a man of 70, even though I don't feel 'elderly' and, to my knowledge, I'm not immuno-suppressed. AI mode said that it doesn't matter if it's vegan, bacteria can still multiply as rapidly as if it were a meat or fish dish and that even very thorough reheating doesn't remove all the toxins. I'm sorry this question is so long, but are there any food/cookery experts who can advise me on this? Many thanks!

I'm no expert on anything but I would not think twice about eating these. I would avoid putting food outside again though, too easy to forget!

Many thanks for your reply @ShawnaMacallister . I was tempted just to reheat thoroughly and eat it but was put off by the advice on Google... both portions are still in the fridge, but I need to make a decision tonight on whether to eat one of the portions. Maybe you are a lot younger than I am, so it'd probably be fine for you :)
As you've admitted you're not an expert, I would ideally like to see a couple of replies from others as well, please.

Im a chef. It will be absolutely fine to reheat. Make sure its up to 75 degrees c.

And, yes, I shall try not to leave any dishes outside in future, even in the communal hallway area, as I could forget about them!

Many thanks for your advice, @Dartmoorcheffy . As you are a qualified chef I shall take your advice. As long as I make sure the final reheated product is up to 75 degrees C. I presume that (re)heating the soya mince mixture on the gas hob would be far preferable to the microwave to ensure it's piping hot all the way through?
