Massive bags of Brussels, Carrots and Parsnips, what can I do with them?

Was gifted massive bag of each of:
Brussells
Carrots
Parsnips

Also, Shallots as well...am going to chop and freeze these I think

What can I do with veg other than blanching and freezing and soup?

Veggie curry
Saute chopped onions then add bite sized carrot, parsnips, potatoes and cauliflower, (use whatever root vegetables you have and like) add curry paste (I love Pataks jalfrezi), chopped ginger and garlic and stir well. Add a tin of chopped tomatoes, block coconut, chutney and a little water if needed, together with salt and pepper. Stir in chopped pepper and a tin of chopped tomatoes and chick peas and a few ounces of lentils which absorb all the lovely juices. Simmer for about 45mins until
veg has softened.
Serve with rice, naan bread and bajis (try home made ones with gram flour they are amazing!)

You can freeze everything op. Just peel, chop and blanch then transfer quickly to icy water. Dry on clean tea towels and freeze.

Blanch parsnips for 3 minutes max. If the sprouts are large/carrots whole 5 mins max otherwise 3 mins for small sprouts and chopped veg.

I just roasted all my leftover carrots, parsnips and sprouts with a head of garlic and a couple of onions. Then added to a pan with vegetable stock, cumin and garam masala, and used an immersion blender to blend to soup. Even my fussy teenager liked it.

How massive is 'massive'?

They sound like the cheap veg bags the supermarkets were doing before Christmas?

They'll be fine for a few weeks so plenty of time to eat as part of your normal veg. I think I had a bag of shallots that got lost at the back of the veg drawer for a few months once as I couldn't remember what they were for. Were fine and got used eventually.
