I reckon if you had cod loin it would hold up to that recipe he did with monkfish a couple of weeks ago would be ace.

Alternatively, steam it in a parcel with cous cous, white wine, saffron, corainder, spring onions etc etc n a bit of stock.

this is good - can't remember the exact recipe we use but this sounds similar

I personally think white fish is at it's best just dredged in white flour, heavily seasoned and fried in olive oil with a little butter in there for flavour. That's my 'usual' way.

Then serve it with some nice spring greens with miso / lemon juice / butter stuff or summat. I must have posted that recipe about a million times! Someone bloody cook it!

aha - have googled some more - we use the Jamie Oliver recipe for monkfish with sundried toms wrapped in parma ham

Steamed in a foil parcel with shredded spring onions on top, plus slosh of soy sauce, sesame oil, tinily chopped ginger, salt and pepper.

Divine! Think is Ken Hom recipe.
