Butterfly chicken, tenderise, dip in egg, what do you then dip in and how do you cook it?

Just that really?
What specific products do you dip it in and how do you cook it and for how long?

Just trying to expand my repertoire of recipes/dishes for some fussy eaters!
TIA

I would do a scbnitzel - dip it in the flour BEFORE the egg though, then in breadcrumbs and fry in oil or bake in the oven. You can customise the breadcrumbs with spices, herbs etc.

Breadcrumbs, either standard or panko; season them first, with something that goes with the rest of the meal eg garlic salt, paprika, jerk etc

Could be dipped in flour & then egg again & then breadcrumbs if you want a thicker coating but it does get messy!

Fry in shallow frying pan, about 0.5cm of oil.
Can deep fry if you can be bothered.
Probably also works in an air fryer.

As others have said, flour, egg then (panko) breadcrumbs. I like to brown in a pan with a little oil then into the airfryer to finish. Can't be doing with deep frying.

If you don't have breadcrumbs you can use flour, then egg, then flour again. Make sure it's seasoned a lot. Or you can use crushed cornflakes instead of breadcrumbs.

Breadcrumbs

Whisping · 26/12/2025 21:51

Flour mixed with chilli, pepper and salt, then egg, then panko. Fried until crispy, served in wraps with salad.

I usually coat in egg, breadcrumbs, then egg and breadcrumbs again. It's messy, keep one hand for egg, one for breadcrumbs, Don't need to fry, I usually spray with oil and oven bake.

For variety add seasoning to the breadcrumbs, or crushed crisps, or cornflakes, or rice crispies. Crushed cheesy doritos work well too, or frazzles, onion rings etc

I make chicken nuggets by cubing chicken breast, dredging with a small spoon of mayonnaise and coating in oat flour or gf crumbs. Then cook on a well oiled bbq.

Saves a lot of faff.

Flour, egg and Paxo stuffing mix. Then fry or oven-bake.

HeadyLamarr · 27/12/2025 07:00

Flour, egg, matzo meal with herbs or spices of choice.

Panko breadcumbs mixed with dried thyme, cayenne pepper and parmesan cheese. Shallow fry - thanks Nigella for this recipe, Have used it for years

Thanks all.
When you shallow fry, how long do you fry for and is it over a low, medium or high heat?

On medium heat, up to 5mins each side, depending on the thickness. Until it’s nice and golden.

HolidayHappy123 · 27/12/2025 08:49

Flour, egg, breadcrumbs/panko seasoned with salt and pepper. Shallow fry in vegetable oil.

I like to add sesame seeds, garlic powder and a little bit of ground cumin and paprika to my breadcrumbs.

AuntyBulgaria · 27/12/2025 08:53

I often coat this sort of thing in crushed up Ritz crackers. They make an excellent coating.

ShoesSnooze · 27/12/2025 19:46

Today I tried butterflying the chicken, tenderising it, dipping it in plain flour, beaten egg and then panko breadcrumbs.
I shallow fried it for 3/4 minutes on each side in a skillet pan and it seemed to go nicely brown.
I then put the pan in the fan oven for 8 minutes at 170 degrees.
It was cooked through and was ok but it wasn't crispy which my rather fussy daughter prefers.

I don't know if it was the fact that there was some oil left in the pan when I put it in the oven or did I not get enough breadcrumbs on it or was there excess egg?
Any thoughts?

Maybe next time I will try and remove excess egg put more breadcrumbs and after browning in the skillet pan for 6/8 minutes, put in the air fryer to crisp up?

Confused!
