Christmas Leftovers

I am in the fortunate position to have quite a few leftovers from Christmas dinner today. Thought it might be nice to share what everyone is doing with theirs. Nothing too adventurous today:

L: Onion bhaji & sour cream dip salad
D: Bubble & Squeak with the roast potatoes, parsnips, other veg and pigs in blankets.

We had leftovers for lunch. Cold turkey, refried pots, snips, sweet pots and peppers, fresh air fried sprouts and pigs in blankets, freshly steamed cauli, cabbage, broccoli and mange toutes with reheated gravy. 10% of yesterday’s effort, 90% of the taste.

I did bubble and squeak for lunch. I make my Christmas shoots by braising them in butter, sugar and star anise. I used the butter from that to fry off sprouts, bacon, chestnuts, parsnips, roast potatoes, carrots, turkey, stuffing and ham. Cooked for good 30 mins and then added some balsamic to cut through the butter. Cooked for another 10 mins to reduce the balsamic. Seasoned with salt and plenty of pepper. Probably one of my favourite meals😋

Pie. In a large pie dish, chop up all your leftover meat, pigs in blankets, stuffing, veg, roast potatoes, bread sauce and add a couple of dollops of cranberry sauce. Mix with gravy and some double cream. Top with a layer of puff pastry. Bake for 35 mins in the oven. Delicious!

Himself has already earmarked the leftover veg for later. The teen has been working through the potatoes and I have stripped down the chicken (it was HUGE! Weighed 11lbs! Yes, it was a chicken not a turkey) and frozen half in small portions/slices.

And made some into a chicken mayo sandwich filling.

I had chicken livers for the sausagemeat stuffing but only used half. The rest are now a chicken liver parfait.

Rescued an avocado before it lurked into awfulness. Now we have a small tub of guacamole.

I think I’m going to be left with cream, if anything. But I am planning a trifle at some point.

Either way, less cooking for me for a day or two, though it might get quite sandwich-y…

Turkey Cranberry Brie and stuffing Wellington with left over roasties and veg
Christmas Pudding crumble and rum sauce for afters.
The turkey carcass is in the slow cooker for turkey soup tomorrow.

I made my dad several turkey and ham pies for the freezer. Made a veloute then added chopped meat and covered with pastry.

I made really nice sandwiches yesterday - baguette, cranberry sauce, pigs in blankets, stuffing and a handful of rocket.

The rest of the week I’ll be making:
creamy pasta with turkey, sprouts and bacon
turkey chili
turkey curry

(we had a lot of turkey left over!)

I’ve got bubble and squeak, an entire roasting tin, so will freeze some for later into January- serve with ham and poached egg. For now will eat with cold meat.

May make a curry with the cold meat

certainly will not need to visit supermarket for a couple of weeks

I had a pretty simple potato hash for breakfast yesterday with leftover roasts, pigs in blankets and veg with a fried egg on top. No mash so no bubble and squeak.

I'm planning to freeze leftover beef for a couple of easy roast dinners in early January!

Leftover turkey is going to be turned into a teriyaki rice bowl for dinner tonight.

I'm struggling with our leftovers, mainly picky bits (arrgh I hate that word too!).

Mounjaro and Wegovy have taken away my ability to get much joy from food only sporadically now and I just keep forcing cold cuts down with copious increasing amounts of chutney. Prior to WL injections the whole lot would have been wolfed down. Now the local fox is having a feast!

We do Christmas Pie, chopped turkey/ham in a sauce made with mushrooms/leeks/stock/leftover gravy. Into a dish then with a layer of stuffing over the top to stop the heat affecting the puff pastry lid while it bakes, gets good and crispy that way!

I still have quite a bit of turkey, so tomorrow’s plan is to make turkey tacos.

Remaining: two tubs of cream and some mini quiches. The quiches were so bland that they will probably be chucked unfortunately. I know that I can whip the cream and freeze it if necessary.

I have two large containers of cream left too, I will be making ice cream with them using condensed milk. But if you don't want a lot of ice cream you can make garlic potatoes and freeze them if you would have use for them and space. I made two large batches for Christmas day weeks beforehand and froze.

We had Christmas dinner with all the trimmings, bubble and squeak the next day, lots of turkey sandwiches and still had loads left over.

I’ve made a sweet leek pie filling with most of the veg leftovers, some of the turkey and cream, and a curry with more of the turkey. I have a couple of portions of turkey left so am looking for something pasta-y to use that on I think.

We also have cauliflower cheese and some red cabbage left but given it’s from Thursday I think it might be heading for the food waste if I can’t think of something to do with it.

Lemon ice cream is just double cream - half the quantity of sugar, mix together untill the sugar dissolves - then add the juice and zest of one lemon. Pop in freezer for 90-120 minutes and then whisk with an electric whisk until double in size.

Thats it and it is the most delicious lemon ice cream
