Potato salad - steam potatoes whole or cut up already and storage ideas?

Im making a potato salad for boxing day, need to do it today

A) will it be ok and whats the best way to keep it as fresh as possible
B) I havent done one for years, do you cut the potatoes up first before steaming or do them whole and then cut up?

Im keeping it simple with just spring onions and chilli mayonnaise. I think. Im a terror for adding things as I go along so the whole thing could turn out completely different

In my mind I also have an idea to do it with just olive oil and roasted vegetables rather than mayo, I'll see how I feel

But basically best way to store it and how to cook the potatoes please, thanks

Whole potatoes steamed then cubed , store in the fridge or a cold garage

It will keep until Boxing Day fine, as long as you keep it in the fridge obviously. But if being stored for that long, it’s worth remembering that the flavour will deepen, so for example if you add garlic, it will taste more garlicky in two days.

I boil or steam the potatoes whole so they absorb less water. Then chop them after they have cooled down and mix with whatever sauce I have made for them.

Waxy/ new potatoes.
Whole or halved.
Cover with cold water, pinch of salt and bring up to the boil, simmer until tender when you poke in a sharp knife - about 10-15 mins.

Drain and leave to cool.
Lightly chop them in bowl roughly with a sharp knife.

Add enough mayo to coat lightly, if you have sour cream then a spoonful of that too, and season well with salt and pepper.

Cover with cling film and keep in fridge for up to 3 days.

Optional:
chopped spring onions
chopped fresh herbs - mint and chives
sprinkle of paprika or cayenne
