Hairy Bikers’ Christmas Gammon Recipe

I usually use a Hairy Bikers’ recipe to cook a gammon for Christmas. I seem to have mislaid my note of it and the link to the recipe (I think it was a Saturday Kitchen recipe from about 13/14 years ago) is no longer working. I wondered if anyone has it and would mind sharing it?

it involves cooking the gammon in apple and pineapple juices, with lime zest and various spices.

Key Steps for Hairy Bikers Style Slow Cooker Gammon:

  1. The Slow Cook: Place your gammon joint in the slow cooker. Add liquid like apple juice, orange juice, or even cola, plus aromatics such as bay leaves, peppercorns, cloves, star anise, or a cinnamon stick. Cook on low for 6-8 hours (or high for 4-5 hours) until very tender.
  2. Prepare for Glazing: Carefully remove the gammon, drain the liquid, and let it cool slightly. Remove the skin, leaving an even layer of fat. Score the fat in a diamond pattern.
  3. The Festive Glaze: Mix ingredients like honey, marmalade, brown sugar, Dijon or wholegrain mustard, and spices (allspice, ground cloves, ginger).

It’s funny, when you google Hairy Bikers’ Christmas gammon, there are several recipes they did over the years, but none quite like what you describe. They clearly did a lot of different Christmas gammons!

Absolutely! I still have the link saved in my favourites but, sadly, the page can’t be found now.
