Christmas Pudding Icecream

Hi
I want to offer christmas pudding icecream as Xmas Day pud for my daughter's partner as it's his first Christmas with us and apparently he loves it!
However, some recipes say just mix bits of pud into good quality vanilla icecream, some use condensed milk and cream, some make a custard...has anyone done any of the above and had a successful outcome. All advice welcome, thanks.

I did one a few years ago and it went down well. I made a bombe by letting ice cream soften and then pressing it around the sides of a pudding basin. Filled the hole with another ice cream to which I added fruit and nuts and some alcohol. I know I used a very good vanilla, but I can't remember what the other flavour was. You could use any flavour you like really. Back in the freezer, and then turn it out on a nice plate with some holly sprigs, it looked good, and those who don't like Christmas pudding appreciated it.

So, the recipes you have found are basically either telling you to mix with bought vanilla ice cream or to essentially make your own vanilla ice cream and mix with Christmas pudding. So it’s really up to you which you would prefer.

It will be easier with an ice cream maker if you make your own with a custard base.

You will be okay without an ice cream maker if you use condensed milk with whipped cream as a base or if you buy vanilla ice cream.

my parents have made this and I may have done so years ago but I’m afraid not recently enough to have a go to recipe suggestion for you.

Do you have an ice cream maker? I make mince pie ice cream every year - bash up a couple of mince pies and mix into store bought custard, churn until frozen. Could not be easier and gets rave reviews. I’m sure it would work just as well with Christmas pudding. I use M&S fancy custard.

I make this every year from this recipe, the no churn method with cream and condensed milk. Always buy a supermarket pud especially to make sure we have a pud for making ice cream so as not rely on there being leftover pud

BBC Good Food have a recipe for one which I’ve made several times and it always goes down well.

It takes a day or so to make as you have to keep freezing then churning it up with a fork. But it’s made with double cream, dried fruit, brandy, cranberries and ginger biscuits. It’s really tasty and you get all the flavours of Christmas pudding in a homemade ice cream.

The recipe doesn’t appear to be on their website though. I’ve got it in an old copy of the magazine.
