Christmas vegetable bonanza!

I am anticipating shamelessly buying large quantities of. the 8p/10p vegetable sales this winter: it looks like we will be able to get cheap parsnips, potatoes, swede, carrots, sprouts, red and white cabbage, small onions and possibly leeks.

what recipes can I add to last year’s list so I can batch cook on Boxing Day and fill my freezer?

(I struck lucky with very cheap double cream in the sales after Christmas, hoping to do the same again!)

Here is my list so far;

  • Leek and potato soup
  • red cabbage pickle (I have jars)
  • frozen mash (potato; carrot & swede)
  • mulligatawny soup (my recipe uses parsnip, onion, swede and carrot)

Chopped onion and chopped soffrito mix (onion, celery, carrot) freeze well and make a great head-start on dinners, soups etc

also herbs if you get yellow sticker bargains, just crumble in from frozen

I get a weekly veg box delivery and usually make a gratin of some kind. Cabbage gratin is delicious!

I'm doing the same this year and mainly planning to make loads of soups to fill the freezer, following for more ideas! Aldi and lidl are also including broccoli, Asda usually give it all away on Christmas eve near closing if you have one nearby.

Me too, I prep lots of stuff for the (chest) freezer and have easy homemade soups right through the first two weeks of January.

I keep it all in the garage. It’s the same temp as a fridge. Boxes of veg takes us through the winter.

It's pretty easy... Just finely chop up any white or green cabbage and layer in a dish with a cheese sauce (I usually add nutmeg and mustard to the sauce). Top with a mix of grated cheese and breadcrumbs and bake in the oven 170 for around 40 minutes.

I ordered the local veg box to eat a bit more of a seasonal diet, and include more veg variety, but my son says we've just doubled our cheese and milk intake now because I shove everything in a gratin. 😂

I’ll be prepping tonnes of parsnips and making Jamie’s spicy parsnip soup.

I’ll use carrots and onions for lentil soup too. We always have a gammon on Xmas Eve and it makes the best ham stock for lentil soup!

Do you eat meat? I often make a ham/pea soup, but its full of other veg too and more like a stew in terms of thickness.

-Smoked ham hock, 2 packs of quick cook split peas made up as per instructions, onions, celery, potatoes, carrots and can also add swede and/or parsnip. I like parsnip, but do find the flavour can take over though.

Im also off to hunt for quick-cook split peas! I am not sure I have ever found any split peas that cook properly let alone quickly despite soaking and simmering to death.

Yes @JDM625 i do eat meat, but wherever possible I’m cutting down simply enjoying having half the week veggie only

These are the quick soak peas I use for pea/ham/veg stew. I've only found them at tesco and asda, often next to the 'Bigga Peas' packet which are NOT quick soak ones. You soak all the peas and the 2x bicarb tablets from the box, in a bowl of boiling water and leave for 2hrs. Don't boil on the stove top as it will turn to mush and you want to be able to drain the bicarb water off the peas before using them. I use 2 packs when I'm doing a large stew, but if you prefer it thinner, just use 1 box. once rinsed well, I then add the peas/ham/veg to either the slow cooker or stove top to cook the stew 😋

Here is a delicious curry that is so versatile. I often make it veggie with spinach, sweet potato, carrots, potatoes, cabbage or whatever I have. Also works with chicken.https://www.bbcgoodfood.com/recipes/thai-pork-peanut-curry

OP- I was thinking about this thread today because my fridge is bursting with veg and I came back to check some of the wonderful recipe suggestions. What did you end up making?
