How do I make mince pie pastry which tastes like a really good shop bought mince pie?

I much prefer homemade mincemeat to the fillings you normally get in shop bought pies, it’s just a different product.
However, although I make a decent shortcrust pasty, there is something about pastry in the shop bought ones that I really like.
What is the best pastry you’ve ever made for mince pies?

@OMGitsnotgood you need the 'right' mincemeat too - some are very dry. I like both Waitrose and Sainsburys own brand best,. Sometimes I decant the jar contents into a bowl and stir in a generous spoon (or two) of brandy if it looks a bit dry.
I use a mix of SR and plain flour to give a lighter pastry - I have better bread hands than pastry hands! - handle it as little as possible, keep it as cold as possible and roll it as thin as you can get it without it splitting. Try not to stretch it as you roll.
All the above tips came from my mum who made the most amazing mince pies before she had her stroke and I've never had any complaints about mine Grin

Yes I know but our local supermarkets no longer stock it. Someone up thread said Waitrose have it, but our nearest Waitrose is a bit away and is a small one. Where do you buy yours?
In case you didn’t see what I wrote preciously and don’t already know, it is great for roast potatoes.

You could use some vegeatble oil such as rapeseed oil instead of the Trex.Say, 2/3rds butter and 1/3 oil by weight. That makes a really short pastry too!

There is an amazing mince pie recipe on good food - it’s an orange flavoured sweet pastry using icing sugar. It’s the only recipe I make now (and had done for years!).

I use a Nancy Birtwhistle recipe; flour, butter, a small amount of icing sugar, and an egg yolk. I sometimes substitute 15g of the flour with almond flour. Works really well.

I can recommend Jamie Oliver sweet pastry recipe it’s the only one I’ve done right!
