Chocolate chip cookie recipe like Maryland

All the recipes I've tried are the more chewy, larger type, and not the short, almost shortbread type that Maryland are. I want to make them for my dds, one who is allergic to dairy and gluten intolerant and one who is allergic to cocoa. Does anyone have a recipe that is like this?

Look up toll house cookies! I came across the recipe in a Mary Berry book, but Nigella has a recipe too. They are the original American chocolate chip cookies, and there's an interesting story behind them too.

Well, gluten free flour, dairy free butter, and dairy free chocolate chips for my dairy allergic dd and carob chips for my cocoa allergic daughter. Two batches, kept separate.
The whole point of me trying to make something like Maryland cookies is because, whilst dairy free, they contain gluten and cocoa.

Hi, OP -

I lived in America for over 15 years and I love Toll House cookies, but I don’t think they answer your brief. Chocolate chip shortbread cookies are something else entirely and I agree that Maryland cookies are a pale imitation of the latter.

I suggest searching for a well reviewed recipe for choc chip shortbread cookies, then making your necessary changes. The American ones tend to measure by volume rather than weight. Also be careful if they call for a specific brand of salt - often this is an American kosher salt with large crystals. If you use regular (British or American) table salt, the crystals are much finer and it is suggested to use half the volume.

I would make a chocolate chip shortbread. I think that will be the closest to what you’re asking for. By their nature, chocolate chip cookies are moist and chewy, but you want a hard biscuit base with chocolate chips added. So choose your favourite GF DF shortbread recipe and use whatever you’d use instead of chocolate.

@poetryandwine I think that's the route I will be going down. I have found this one which looks as if it has a similar texture to the Maryland ones, and I can use almond butter as my ED has also reacted to peanuts.
I think I need to steer clear of recipes that say space well apart when baking as they spread, as they, although amazing cookies, are not what I am after.

you read the comments? I will get back to you soon with some reliable US websites that do choc chip shortbread. Of course, if these sound perfect then by all means go ahead!

BBC Good Food (British measurements, obviously, highly rated, I find the site reliable

Alison Roman (I haven’t looked at her recipe but she’s often very good)

All Recipes (I haven’t checked the recipe, but see that it is highly rated and the site is generally reliable)

NY Times Cooking (nearly 15,000 top reviews. My comment about salt, above, applies to most NY Times baking recipes.This may be behind a paywall. I subscribe. If you want me to send it to you and we can figure out how to do that, DM me)

A little update. I've just baked these, just half the amount which still did a lot of cookies (30 with my scoop which I think is 1 tbsp). Still not quite there, but getting closer. Next time I will try less sugar, and maybe just the brown sugar, as they are very sweet and might leave out the baking powder which might give them the consistency I am after. But they are pretty good
