DH has invited a couple of work colleagues and their partners (for the first time!) to dinner next week and I thought I would dispense with a starter and just go for several nice picky things on the table before hand. Apart from the usual things like olives and bruschetta (sp?), does anyone have any nice ideas? Dinner will be some sort of casserole, prob beef based, so would esp like some prawn/fishy ideas, but nothing which needs fiddling with at last minute as I get quite nervous when meeting new people and don't want any last minute panics!! TIA

Mini crab cakes? All prepared in advance then fry at last minute. Big platter of fresh seafood - mussels, langoustines etc, even oysters - bit more fiddly for people to eat but has the advantage of taking some time.

What about a smoked haddock and prawn pate which I made this Christmas and is delicious.
2lb undyed smoked haddock
4 oz prawns (fresh or defrosted - not in shells!)
250g tub curd cheese
juice of half lemon
black pepper
4 oz butter

Cook the haddock gently in 3 oz butter in a frying pan, remove all skin and any bones. Put in the food processor with the curd cheese and the lemon juice. Mix till smooth (ish) then roughly chop prawns and fold in. Put into nice serving dish, melt the rest of the butter in a saucepan, pour over the pate, thinly slice the other half of the lemon and decorate the surface (about 3 slices). When cold, put in fridge to chill completely. Serve with any ready-made savoury biscuits eg. hard ciabatta, crispbreads, etc. Can be made up to a week in advance and keeps in the fridge.

Or:
cocktail blinis with a small dollop of creme fraiche and a twist of smoked salmon or some pretend caviar on top (both look pretty served together)
This is making me hungry must go get some lunch now

Cocktail sausages cooked in honey and wholegrain mustard. Easy and guaranteed to go down a storm. Whevenever I do them there's nothing left !

Put Cocktail sausages (as many as you like) in a baking tray and then put about 1 tablespoon of honey to 3 handfuls of sausages (sorry oz and kgs not very good !) and then about the same of wholegrain mustard. Mix all up but don't worry too much they will mix themselves as they get hot. Bake in a preheated hot oven (200 degrees C) for about 30 - 40 minutes or until you think they're cooked but not charcoaled I normally serve with a little pot of cocktail sticks.

my favourite is dates or prunes (without the stone) wrapped in a little streaky bacon. Either buy very thin streaky bacon and use a whole rasher or use half a rasher for each: just wrap them and stick them in a medium oven until the bacon is cooked (about 10mins, or 20 mins if you want them a little crispy). Easy!

Rye bread spread with cream cheese, cut into small squares then a small slice of gherkin/pickle/red pepper etc on top.

Ooops, I meant pumpernickle or black bread. You can find it ready sliced at most supermarkets.

I love mushroom vol-au-vents - buy the vav cases from the supermarket, bung em in the oven at your convenience till cooked, buy a tin of mushroom filling, fill them, and there you go!

Also see the American ideas on the 'hosting a luncheon thread' - really yummy suggestions.
