Lasagna from scratch cooked in the microwave

The oven in my stove has broken (the stove-top hobs still work) and I can't afford to replace it yet.

The thread about Vegetable Lasagna had me drooling and made me wonder if you could cook a lasagna in the microwave.

Online research says yes!

Has anyone tried it? I'm doing it tonight (in Australia so diff time zone) but wondering if anyone else has done it with success? You can even find recipes for solo mug-lasagna. Who knew? Not me!

Am basing my recipe on this. Am doing mushroom/spinach/tomato. Wish me luck!

It won’t be quite as good, microwaves tend to dry things out more but definitely worth a go. Do you have an air fryer you could make smaller portions and bake it in that

You can cook it in a pan on the hob too.

OMG it worked!

I did it almost exactly as the epicurious piece.

Cooked the mushrooms with garlic, herbs (sage, thyme & parsley, that's all I have in the garden right now) and added a bag of pre-washed fresh spinach.

Made a bechamel and added frozen spinach. I love frozen spinach- you get real bang for your buck with that stuff. Also nutmeg.

Layered as usual but used a jar of tomato pasta sauce. Used dried lasange sheets, not the fresh ones.

15 mins covered in the microwave and wow! I truly recommend this.

Had leftover ingredients so did a smaller one for 7 minutes and again, it really works. You don't get the lovely crusty baked-on bits as you would in an oven. But if you have no oven do try it it! 😃

@Blondeshavemorefun Yes I agree- to me 'noodles' mean asian cusisine. Then again I suppose they're all the same thing- flour, eggs & water! Noodles, pasta etc.

Apparently a mince version works too.

No, but a slow-cooker is much cheaper than a new stove/oven so I might get one. But we're coming into summer over here. God help me but I might have to buy an air fryer!

I use my air fryer mostly in the summer when it's too hot to turn the oven on.
