What to do with too many eggs

Friend has hens that are laying and I find myself with a surfeit
What can I do with them ?
I'm not a brilliant baker and don't have a lot of freezer space and wouldn't be sure best method of freezing.
Any suggestions?

Tortilla (this freezes ok), egg mayonnaise sandwiches, omelette

Picked eggs if you like them ( I don’t!)

as a former hen owner these were the easy things that used a lot of eggs

If you can make room in your freezer, I’d make a batch of Yorkshire puddings.
Frittata for dinner.
Separate and make meringues-will
keep for ages in an airtight container. Use the yolks for lemon curd (or give to the dog as I do!)
Egg fried rice
Eggs will keep for ages but can be separated and frozen in ice cube trays

Pancakes (crepe style rather than American) and French toast always use plenty of eggs.

Super easy baking wise is English almond macaroons - ground almonds, egg whites and sugar. Dollop onto a teflon sheet or rice paper (do not think baking parchment will do, I have made that mistake, it won't), splodge of raspberry jam in the middle, bake. I can find the recipe if you want.

Cakes freeze well and you can freeze eggs if you seperate the eggs and whites.

I made a really nice dahl with eggs. Bpil your eggs, peel and roll in curry spices.
Make your dahl, add the eggs to cook the spices off. Serve.

Otherwise, just sticking egg on top of any noodle type dish.

Easy vicoria sponge- whip 4 eggs with 250g sugar, add 250g softened butter, 250g Sr flour. Add flavourings. Split between two tins, bake. Serve with fresh cream, jam and berries.

Eggnog?

If you can master the art of peeling soft boiled eggs, they are gorgeous halved in a bowl of Japanese noodles with clear soy broth, a bit of pork, nori, mushrooms and green veg. I dream of soft boiled egg soba noodle bowls!

Omelettes and frittatas use loads of eggs.

You say you are not good at baking, but a rich cake mix - fruit or almond, using four eggs to 200g flour will make a moist loaf cake that lasts well in a tin for a couple of weeks.

You could pickle some if you like pickled eggs.
Don't need any freezer space and last for ages.

@Seaside3 is right - you can make an all-in-one Victoria sponge this way. So easy. Doesn't take long.

-Lemon Meringue. I use a pre-made pastry case from a supermarket to save time

Way less, no stiff peaks required. They aren't like fancy macarons though, but they are delicious.

Ingredients in photo once it has been approved.

Literally just mix everything together except the jam, put on the tray (lined with either a Teflon sheet or rice paper) in biggish teaspoon sized dollops, and flatten a little bit, leaving lots of room for them to flatten and spread.

Make a dimple in the middle and pop a little splodge of jam in.

Bake til going goldenish. Don't over bake or they'll go crispy. Let them cool before you try to move anything or they will collapse.

Eggs Mornay - basically hard-boiled eggs in a cheese sauce; bake in the oven with more cheese on top and cook till the top is nicely browned.

Do you have kids hard boil them and let them decorate them. Make a cake. I also like the freezing Yorkshire pudding idea. Also give some away i bet your neighbours would really appreciate it.

Korean jam eggs. Make hard boiled eggs, peel them, then marinate them in soy, sesame oil, ginger, lemon, garlic clove, chilli, sesame seeds and spring onion. Delicious and the marinade will keep in the fridge for a while.
French toast! Egg fried rice. I also like a kind of protein pancake which is 2 eggs, a dollop of Greek yoghurt, a spoon of oatbran, chopped herbs if you have them and then fried off in a hot pan like scotch pancakes.
