Any ideas for puds I can make and freeze for a party

Just wondering is anyone can inspire me. I've been asked to make a pud for a Christmas party buffet. Trifle is already catered for and the suggestion was cheesecake. Have looked at loads of recipes but they are not freezable. I'd prefer something I could make and freeze in case it's a disaster cooked the day before! Any go-to recipes you use that look good and always work. I'm catering for 10 to 12 people.

I often freeze Bakewell tart and it’s completely fine. It’s best frozen without any royal icing, as the icing can turn sticky when it thaws. Leave the tart in its tin and then wrap tightly in a double layer of clingfilm and a layer of foil. To thaw, unwrap and leave at room temp for about 4 hours and add the royal icing, plus any decorations before serving.

I’m not sure if it’s freezeable, but a big bowl of chocolate mouse is so easy to make, uses 3 ingredients, and will keep for a few days in the fridge. Easy to transport too!

The no bake cheesecakes freeze fine short term, if I'm freezing a long time ahead I freeze it without the biscuit base and then just pop it on a fresh one to thaw, I find the base softens eventually in freezer. At Christmas I always have some plus a chocolate roulade in the freezer, sticky toffee pud freezes well too. The chocolate mousse mentioned will freeze fine too as do brownies.

I make a pavlova base and freeze it, taking it out of the freezer the night before it's going to be eaten. Whipping the cream and arranging the fruit on top takes 10 minutes.

But it from COOK! comes frozen, their cheesecakes are fab. 😁 I buy them for our Christmas gatherings, I’m a good baker and make some great desserts, however these are as good as homemade and a save a lot of hassle!

Thanks everyone. Lots of delicious ideas. If I go for cheesecake can anyone explain why when I do the biscuit base and I come to serve and cut the cheesecake the base is rock hard, separates from the cheesecake and you almost need to resort to a hammer to crack the base!

I make profiteroles, they freeze well. Also a chocolate sauce that freezes.

You're squishing the base down too much. Just smooth it so it's flat: don't biff it in with the bottom of a glass like people seem to suggest.

Base too compacted or too much butter in it makes it rock hard. What is your ratio of butter to crumbs?
