Can anyone recommend any insanely simple recipes using chicken, yoghurt and tomato sauce with chicken?

I struggle with cooking due to disability and only manage to cook once every couple of months. I love creamy food but am trying to limit my fat intake so wondered if anyone knew any really simple recipes with yoghurt, chicken and maybe tomato? When I googled simple recipes or even specified I was looking for things with only a few ingredients, it brought up results with dozens of ingredients needed. I would get totally overwhelmed!

Cook chicken breasts in olive oil and garlic, add mushrooms and asparagus, cook pasta separately to add. Mix with lemon juice, marscapone and cream fraiche. Serve with garlic ciabatta.

How about roast chicken with jacket potato and roast tomatoes?

Turn oven on to 180.
Prick holes in a large potato and put it into the microwave on full power for 10 minutes.
Put the chicken and tomatoes into an oven proof dish and then put a little bit of oil, salt and pepper on them.
Once the potatoe is finished in the microwave put the potatoe and the chicken and tomato dish into the oven for 25 minutes.
Serve with a big dollop of plain yogurt on the potato.

Indeed, it’s like they didn’t read the op!

grill the chicken and tomato’s and then a big dollop of yoghurt to dip
pr save for dessert and have with some honey and berries

Simplified marry me chicken? Onion - use the pre chopped frozen stuff or swap it for frozen sofrito if your supermarket stock it. Spoon of jarred garlic. Chicken. Mixed dried herbs if you have them and can be bothered. Tomato (sun-dried from a jar, puree, fresh - whatever you can manage). Not traditional but you could up the health benefits and chuck in pre chopped greens, a bag of spinach or some frozen peas or green beans towards the end. Finish with a spoon of yogurt to make it creamy.

I also often swap out the chicken for a drained can of beans

buy:

diced chicken breast
jar of curry paste
tinned tomatoes with ring pull
Greek yogurt
optional- half size tin light coconut milk with ring pull

fry chicken breast with curry paste
add tinned tomatoes and coconut milk if using into the same pan
simmer for 15 minutes
Add a dollop of Greek yogurt at the end to serve

on the side you could have a packet of microwave pilau rice, op put mini naan breads in the toaster

When I have a flare-up of arthritis I’m in the same boat, OP.

I have a pot of (supermarket) Lebanese 7 spice mix that I would bring into play. Paprika or hot paprika would also work.

I would marinate the chicken in the yogurt with spice for an hour, while I have a sit down to recover from the above exertions ^^

Then I would cook the chicken in a pan with the tomatoes, stirring occasionally, and sitting down occasionally too.

I like those Vee-Tee pots of rice (microwave for 1 minute) so might add one of those if I’m hungry and I have the energy.

Sit down and eat.

When I’m in a flare-up I can’t open jars, even with the gadget thingummy, OP!

How are you with chopping, opening cans/jars, lifting pans, etc?

I think some posters are overestimating what you might be able to manage.

Chicken tika kebab?

Get chicken pieces and marinate overnight in the yoghurt with what ever spices you want, you can just use salt and pepper if you don't like spice.

The following day.

Soak bamboo skewers for 1 hour, thread the chicken pieces on to the kebab either on its own or you can add chunks or peppers and / or onions.

It can be grilled but I use the oven because I can't stand long enough to grill.

Serve with a tomato salad.

Another idea is a tray bake.

Chicken, cherry tomatoes, slices of pepper and any other veg you have hanging around. If you can manage it then a slice of lemon on the chicken is a nice touch.

Just put it all on a tray, put in the oven for 20-30 mins. I've said cherry tomatoes as they don't need slicing and will burst on cooking which I like.

Meanwhile make a raita with yoghurt, the simplest is just to add mint sauce to the yoghurt but depending on what you can do you can add finely diced cucumber and or guava a pinch of salt, some lemon juice.

Place the tray baked food on a plate and serve the raita on the side.

Tandoori chicken - this is actually from an Indian family. More advanced recipe - slash chicken thighs and rub in salt and lemon juice. Less advanced, just sprinkle them on. Mix a couple of tablespoons of tandoori spices ( from an Indian shop or larger supermarket) with yoghurt and stir into chicken. Marinade for a few hours. (Splits up your cooking efforts too). Line a baking tray with baking paper to make washing up easier then place thighs on sheet ( throw left over marinade). Cook in hot oven till done and got nice brown bits on edges. Cook rice in rice cooker. Can also do tandoori salmon or large cauliflower chunks. So easy and tasty. Also nice the next day

I make a pasta dish which, when small, my children called Pink Chicken
Fry a couple of chopped chicken breasts.
Add some finely chopped sun dried tomatoes from a jar.
Add a half cup of vegetable stock, let this boil down from a few mins.
Then add a whole tub of crème fraiche. Let it heat up and add cooked pasta.
The sauce takes about 10 mins to cook from start to finish so is done as the pasta is cooking.

You could do basic coronation chicken using cold chicken, yoghurt, 1tbsp mango chutney and a bit of curry powder mixed together. With a tomato and a bag of salad that would be quite a nice meal?

Something like this chicken paprika maybe? Use pre diced chicken (or even precooked?), frozen onions & garlic.

Not a yoghurt sauce but what about one of those sachets like schwartz or Colemans made up with skimmed milk to keep it low fat? I know my mum likes the chicken supreme, stroganoff and garlic mushroom sachets.

I do a simple chicken and mushroom 'casserole'.

Pieces of chicken or goujons
Chopped onion, I use frozen
An insane amount of black pepper (get the already milled type)
A tin of condensed mushroom soup

Just throw everything in together (obviously empty the tin)
I make it in my slow cooker but it would work on the hob or in the oven.

When it is ready to serve I sometimes add some crème fraiche but I think yoghurt would work just as well. It is fairly creamy without to be honest.

You can add veg to it, I've done leeks and sweetcorn.

It makes too much for one meal so the following day I put the leftovers in a foil tray and add a pre rolled puff pastry lid - that goes in to the freezer for another day.

The taming twins one in the link is amazingly simple. You don't have to chop the chicken if you don't want either, I've done it before just putting in whole breasts. Frozen onions (and frozen peppers if you fancy), curry paste, a tin of tomatoes and either yoghurt or creme fraiche, or a tin of coconut milk. Stir and leave. No chopping, no standing to check it and stir, just leave it for 6 hours and serve with microwave rice.
