healthy winter food

In summer I like lighter food, salads with lots of variety, fish, - we'll often have salmon with a selection of salads.

In winter I can end up defaulting to carb heavy comfort foods. What are your go to healthy winter foods? Keep me away from the mash....

I like roasted veg of all sorts - cauliflower is a favourite but small amounts of squash and sweet potato etc. Can serve with fish, chicken etc.

Curry with Dahl or veg side dish rather than rice or bread is good too

Made black peas from there in the slow cooker this week ( delicious) sold as Carlin or Fox peas. Yummy.
They do soup mix lentils etc.

I regularly make mash by boiling equal amounts of carrots and parsnips with a bay leaf, and then mashing it with butter and salt. Means I get extra veg into my diet but with the comfort of a winter mash. Tastes delicious with sausages or roast chicken.

Though sometimes only potatoes will do and I don’t beat myself up over it!

I swap out some lunch time salads for homemade soups and some evening salad accompaniments for cooked veg. I also do more veg based curries and root veg stews.

Cauliflower cheese (I roast the cauliflower and then mix it with spinach leaves before covering in cheese sauce and grated cheese) - it’s carb heavy, sure, but with a jacket potato it’s cold weather food of the gods.

Yes to vegetable curries.

Veggie sausage and lentil casserole (I use Fry’s vegan hotdog sausages)

I'm already moving to lots of soup and roasted veggie type meals at lunch.

We do a lot of steamed or chargrilled veg with our protein in winter. If I want to get fancy I might make some sort of sauce, but very seldom or it comes in the form of a marinade on the meat/chicken/fish.

Stir fries.

Curries - I like to make them with added veg. I've never understand the concept of a chicken curry with just chicken and sauce.

I am finding myself thinking of swapping to fajitas over our usual tacos with lots of salads!

I'm also trying to eat more beans so am starting to test out recipes that are cosy and bean forward.

Yes, I do a lot of soups and take them into work. My colleagues probably loathe the slurping.
