Vegetarian sausage rolls

For years I have made sausage rolls as part of our Halloween fare. Now my dd is vegetarian and my dh isn't eating processed meat any more for health reasons so I am looking for veggie friendly options. Grateful for any suggestions!

I grate onion sweet potatoes and cheese together , you can add a touch of spice if you like, perhaps bind with an egg

I would be concerned about what they put it in and sausage rolls in all forms are processed

I know people deride a nut roast but I used to make a lovely lentil and nut roast which was really hearty and would be able to be rolled into a shape for sausage rolls

I make these vegetarian sausage rolls regularly.

They are delicious and not 'fake' meat or trying to be something they're not.

Just make sure you make enough for meat eaters too!

I’ve make vegetarian sausage rolls using stuffing mix for the filling. There are often fancy ones about for Christmas. They’re lovely.

You can use a combination of breadcrumbs, chopped cooked mushrooms (squeeze most moisture out, chopped cranberries and green lentils plus herbs/spices of choice, I use thyme and oregano usually, to make something vegan (assuming you have vegan puff pastry) but tastes better than most commercial sausage rolls, I do eat meat but don’t eat fake meat so starting doing these for fussy family members then realised i actually prefer to meat (actually if you sub the lentils for pork mince they are even better but you asked for vegan!)

But I would say my home made pastry (which is only butter and flour) is more healthy than vegan / shop bought puff pastry so if it is for health reasons, it's not really the meat that needs to be switched!

Ooooo awesome, i have made a walnut and mushroom wellington which has quite a meaty texture (so people tell me) didn’t think of making sausage rolls out of it

Whatever your choice of sausage or substitute I always add a spoonful of redcurrant or hedgerow jelly along the top before wrapping in pastry. I copied it from the most delicious sausage rolls I once bought from a church fair.

Most foods we eat are processed. For thousands of years humans have been processing raw foods so we can safely store them for longer and to improve taste, digestability and versatility. Unless you go over to an entirely raw diet you can't avoid processed foods, and there is no medical reason to even try.

You may mean ultra-processed foods, i.e. foods that contain novel ingredients you won't find in a domestic kitchen and whose effect on our health is not fully understood. Home-made pastry is not ultra-processed because all it has in it is fat, flour, salt, water and perhaps an egg or some milk, depending on the recipe.

Ready-made pastry may contain a tiny quantity of emulsifier and one or two other additives, but I can't get worked up about that personally. I don't eat ready-made pastry all that often. As it happens, this very expensive but very good puff pastry, which I have bought sometimes, contains just wheat flour, butter 33%, water, salt.
