one-pot veggie meal - ideas please!

I'm on a rota to provide a meal for the parents of a new baby - it's a village rota and I don't know the person in question, just need to provide something ready-made and nutritious. It can be delivered any time so needs to be re-heatable, and I am completely out of ideas! I'm sure everyone has done pasta to death so would like something else, doesn't have to be fancy and I could cook for 4 and freeze the rest... Your thoughts please!

Can you make a veggie curry and expect them to cook the rice?

Yes, we're quite new to the village and this rota does make me feel sure that this is exactly the place to be! Could do a curry - I'm assuming that they could provide the no-brainer starchy element of the meal!

bake gnocci into a tomato pesto sauce with cheese baked on top- mmm yummy. not had that for ages!

A vegetarian moroccan tagine, it's really easy to make, nutritious, and can be eaten as is or served with couscous, which I'm sure they can manage to make even with a new baby!

lentil hotpot

15ml veg oil
225g red lentils, washed
1 onion peeled and chopped
400g can chopped tom
1 clove of garlic, crushed
10ml teaspoons tomato puree
1 large potato peeled and diced
1 bay leaf
2 carrots, peeled and diced
1/2 tsp dried oregano
2 celery sticks, chopped
600ml pint of veggie stock

Heat oil and fry the onion and garlic until soft but not browned. Add the potato, carrots, celery and lentils and stir to coat the veg with oil. Now add the toms, the tomato puree, herbs and stock.

Bring to the boil, cover and simmer for 40-45 mins., or until veg and lentils are very tender. Remove bay leaf. Mash lentils and veg with a fork before serving if desired.

Wheres the aupair - I haven't cooked gnocchi - tiny bit more detail please? Sounds nice and easy.

My Gnocci is easy! here is my recipe for nice and easy Gnocci:

First I make a rich tomato sauce (onions, garlic, green or red peppers, tinned toms & puree- add can of red kidney beans & chuck in some herbs and red pesto)

Then boil the gnocci in salted water until they rise and scoop them out and throw in the sauce.(the premade ones in the pasta aisle-am not that much of a domestic goddess to make my own!)

Stir gnocci into sauce- season sauce with salt and pepper to taste and add mozzarella and cheddar on the top mmmmm.

Bake in the oven until cheese is bubbling. You can eat it on its own or with crusty bread.

(mmm- really fancy it now but sadly have none of the above ingredients except tinned toms and onions! lol)

I've never made gnocci in any other way as my aunt made this for me one veggie christmas -yummy. I'm sure home-made gnocci are nicer than the pre made ones but i've always found these pretty tasty (and easy!)

stuffed jacket potatoes

bake the potatoes (use a tiny bit of oil and some salt on the skin so they go a bit crunchy) till they are well cooked. Scoop out and mash the insides with cheese, spring onions, a few cherry tomatoes, butter. Put the mixture back in the potatoes and sprinkle more grated cheese and a few tomatoes on top. They can be heated up in the oven or under the grill and are yummy with a salad.

Lol its not something I make every week, but one of my favourites mmm. Tbh I had fresh gnocci in budapest a few years back and I preferred mine! i think the trick is to hoick them out as soon as they rise.

I make spinach and ricotta pancake canneloni which is a little fiddly to prepare but it goes into one pot for cooking.

toast a handful of pinenuts, then add them to a tub of ricotta in a bowl. Wilt a largebag of spinach in a pan, squeeze out the water, chop lightly and mix with the ricotta.

Make a pancake batter and cook pancakes - as many as you get out of the mix (you can eat the ones you don't use )

Place a spoonful of spinach mix in the middle of each pancake and roll up, tucking the ends under. Place in a lightly greased baking dish.

Pour over a tomato sauce (I make mine from a jar of passatta with half a jar of water, half a teaspoon of salt and the same of sugar - one onion chopped finely and a clove of garlic. Cook until thickened and then whizz in the blender until smooth if wanted).

Break up a ball of mozzarella over the top and then bake in the over for about 25 minutes at 200C

I usually make this as far as the mozzarella during the day and then just stick it in the oven in the evening.
