Dinner idea for pod stay with no cooking

My partner and I are having a special weekend away this weekend. It’s one of those mini pods with a hot tub in the middle of nowhere by a lake. We’ve been keeping an eye on the weather and it looks like it’s going to be perfect; chilly but clear skies and no rain so we’re going ahead with it.
It has not cooling facilities; just a mini fridge and a coffee maker. Hit me with ideas for a lovely dinner.
At the moment we’re just thinking charcuterie; nice meats and cheese and wine. But if anyone can think of anything a bit fancier which will travel well in a cool box in the car?

How long between leaving and eating? Do you have a kettle in the pod or access to a microwave?

I was thinkjng a thermos with hot sausages or cheese fondue or similar. I suspect you'll want something hot!

It’s just a nespresso machine and a fridge. We’ll be packing the food up around 1pm and eating anytime that evening. It’s just one night.
Charcuterie is good, but it’s just if anyone had any other ideas.

Cheese fondue in a thermos sounds great! I might test that tomorrow and see how long it stays melty for.

Could you take a small induction hob,? They are pretty inexpensive.
You could make some chilli/ stew or whatever, and take that with you. Don't forget to take a saucepan.

Charcuterie, homemade focaccia, antipasti, homemade hummus … definitely the easiest option. Though I have a wonderbag (haybox cooker) which I use - you prep and bring to temperature at home, pop you pan into the bag and it slow cooks for up to 8 hours with no power!)

Ikea do a great one for £45,it comes in handy when you need an extra hob,mine is used a lot. Will only work on stainless steel pans

That’s the only thing! “Our” restaurant is a sushi place round the corner, so we have sushi a few times a month. We wanted something different. Should’ve put that in the OP.

Yes to camping stoves, but need good ventilation. Those fold up stoves are about £15 top.
Stir fry kit, most supermarkets do them noodles,prepared veg and choice of sauce, add prawns or strips of meat,jobs a goodun

I took a George Foreman grill last time we went in a pod. I pre-prep’d grilled cheese for a late night snack, and we also used it to cook sausages/hotdogs

Personally I'd buy a disposable BBQ (if permitted) and cook some posh sausages and burgers and get some really nice bread. You could buy a ready prepared salad too.

I think charcuterie and posh salads and nice bread and wine, followed by lovely chocs or macarons will be perfect

If there was a kettle I might take a pot of the Itsu noodles each as a soup starter or for if you fancy a hot snack when you come on from a walk.

I would take my George Forman type grill form home and grill steaks and veg ( pre marinate at home).
Take m and s pre main side salads/pasta/ or potato salad with you

m and s lemon tart

take own kettle if you drink tea

Check they have plug sockets before you take a kettle or hob, some don’t and the only power is to their wired in appliances.

I have a camping stove and all that stuff, but we really wanted a chilled night with no cooking and no pots to wash up when we get home, so I’m planning to make ahead and we’ll have a cold dinner. I just couldn’t come up with many ideas!

We’re definitely doing the cheese in a thermos with a baguette; I’ve found a few recipes which say they hold up well in a thermos so that’ll do for part of dinner. Thank you!

Also stuff like cassoulet or french onion soup would hold up well and then only need nice bread. I think french onion soup would feel fancy and warming enough and you could supplement with charcuterie. Then i agree a proper tarte au citron or chocolate pots with raspberries and pouring cream

Well you know me, if you have a hot tub, just scoop up a bit of the water into your Pot Noodle, and wait two minutes.

Should you fancy something a bit more 'a la carte' drop a couple of bags of 'boil-in-the-bag' rice into said hot tub and then spoon over the contents of one, from the many exotic pots available from the extensive Pot Noodle range.

If do a fab mezze plate. stuffed olives, stuffed sweet peppers, feta, pomegranate, cheese pastries/borek, hummus, falafel and salad pittas.

Finish with baklava and candied nuts.

If you're taking flask food, a beef bourgouinon with crusty bread? Start with charcuterie, beef, then cheese and crackers. Sounds fancy, decadent and no need to cook, just buy one from a supermarket and preheat? Nice bottle of red, some port for after? Maybe aome chocolates if you want something sweet/need an energy boost.

We just have a main meal when out during the day and pick up a few deli bits while out like bread and nice cheese or meats and do a snack shop at M&S en route
