Roasting Tin book series. Which roasting tins should I use?

I only have a 24 cm pyrex one so need to purchase one or two more. Have ordered the roasting tin book on vinted (the one by Rukmini Iyer) and am very excited to try aome of the recipes but don’t think I can do them on the phrex dish.
What should I go for? Enamel, stainless steel? Would like to avoid non stick materials. And what sizes?

I use a metal roasting tin for most of her meals but you can also use enamel and ceramic!

I don’t recommend enamel with a lid, I bought one and not only does it cook slower so I have to add time on it doesn’t crisp and chickens look anemic

I'd go as big as you can fit in your oven. A couple of flat enamel ones (I line with greaseproof paper to aide cleaning) and maybe one large deeper ceramic one would cover most recipes. We're a family of four and if the meal is all roasted then we need two large trays minimum, or things are heaped up too much and start to steam rather than roast!

As big a size as possible! Some of the recipes say that the ingredients should all lie in a single layer - I often find I have to split them between two tins to achieve this.

Yeah, as big as your oven will support. We used a turkey roasting pan, then recently moved to a larger enamelled tin that's about the most the oven fits. That's for two people, you need to spread them one layer to get the max crispy and taste, else they stew a bit instead of caramelise.
We eat a lot out of Iyer's books :D they're great.

I use the largest ikea stainless steel baking tins. They come with a rack, which I don’t use. They absolutely max out my oven space - I don’t even need to put them on an oven rack - the lip of the tin sits on the side supports of the oven. If I’m feeling lazy I line the tins with tin foil.

I’ve got two non stick ones in the 33cm size and a smaller square one.

I also sometimes use the tin that fits on my oven rails, or my ceramic lasagna dish.

but the two non stick ones get the most use.

We use the largest Pyrex roasting dish. You can get them in 35 and 40cm. I find shallower roasting trays better for all-in-one tray bakes.

I particularly love Pyrex because it goes straight in the dishwasher.

Thanks all! I wasn't sure whether metal was better than for example glass or ceramic but I guess it depends on the recipe and whether things have to crips up or stay moist etc?

I prefer enamel / metal to glass.
My falcon 28cm rectangular is my most used.
