Flatbreads: what am I doing wrong?

Followed this recipe: s
It's one of those basic ones with flour, some baking powder, salt and yoghurt. I struggled a lot with the dough, was a bit sticky so I added some flour. Also added flour to the surface and rolling pin but issues I had were:

  • when I tried to roll the small bits of dough into a flatbread, it would stick to the rolling pin a lot making it hard to roll in really thing. This would result either in the whole thing breaking or a very thick flatbread that didn't bubble in the pan and didn't cook well.
  • tried to scrape off the stick dough from the rolling pin each time as I felt it was stopping me from rolling these nicely but it was a massive pain to do so with dirty hands etc and then dough kept on sticking again each time.

What am I doing wrong? This is a video with many views and positive reviews so I am sure the recipe is fine, it's probably just me being really bad at this!

My go to recipe is
Bread flour ( white or wholemeal )
Yogurt
salt.
I also add some warm water.

put flour in bowl as much as you want.
then add yogurt until it gets a little bit sticky then some warm water.
knead for a minute then cover and wait for an hour.
Use plenty of flour as you roll them out as you can tap it off before you cook.
then cook in a pan on high heat.
keep turning over until done.

My guess is that you didn't knead it enough. it looks like it comes out quite wet when its tipped out of the bowl. Then generously floured service and on top of the dough and then gentle careful kneading. The way it look after it had been kneaded was very different so I'd say it was done for a good few minutes not just the 20 seconds or so shown in the video.

Roll the dough between two pieces of baking parchment, and use flour to stop the dough sticking too.
I've also had issues getting the dough thin enough, and find this is the best way to do it.

Thank you, you might be right. I definitely didn’t spend many minutes doing it, I also am not quite sure if I am doing the right movements at all.
I only let it rest 5 min or so, would that also make a difference?

I don't know how long the recipe said to let it rest? didn't watch the whole thing. But I would let it rest for whatever length of time it said to do so.

I'd also say that it's worth making sure your hands are cold and dry, and put a bit of flour on them if you need to.

As for kneading it, the best is to simply push it away from you, then fold over from the sides, then repeat. Every now and again pulling it all into a rough ball shape.
