Following on my from Xmas thread about Yorkies, I am now going to attempt making some, in order to freeze them for Xmas day. I am terrified of them, please give me your tips! 🙏

This recipe has never failed me yet! I sub in 25-30ml of sparkling water to add to the milk, also add ground black pepper, garlic granules and mixed herbs to the mixture

Make them, and when cool just shove them in a ziplock or something, and put in the freezer. My top tip is to defrost them first before putting them in the over, otherwise they go like rock

Cornflour and eggs, hot fat, DO NOT OPEN THE OVEN until they are done!!

I have never had the Mary Berry recipe fail me, although I've never frozen them.

I use a nonstick muffin tin. Agree with the earlier advice, very hot fat (I like a bit of oil and a spoonful of goose or duck fat) and don't open the oven until they're done.

I use the same recipie as pp. never sails as long as the fat is hot enough.

Yorkshire lass - i do the equal amounts method but have always loosely followed. One cup of flour. One cup of milk. 4 eggs.

Recently found an older lady making them on tiktok using a jug to get the equal measurements and tried this way which required slightly more egg. Worked a treat. Set the oven to about 230c Fan and use a small amount of lard in the bottom of each tin. Add mixture once fat is smoking. I always drop the temperature to about 200 after 5-10 mins to stop them burning.

Do you think that ghee would work instead of lard or animal fat? 🤔 It has a high smoke point.

I discovered that silicone muffin trays produce miraculously puffy Yorkshire puddings.

Use the Mary Berry recipe above. Use an electric whisk or beater for three minutes, get everything else cooked and out of the oven so they go in on their own and don’t open the oven. No idea if they freeze, they get eaten!
