Vegetarian meals for 1 year old

Breakfast, lunch and snacks are fine but struggling with dinners. He is a fussy eater but seems to like pasta but can't feed him that everyday. I'm not vegetarian and he is not my child.

Scrambled egg/omelette with cheese
Hummus and/or avocado on toast
Any sort of blended veg soup with cream or cheese and buttered toast
Savoury muffins (feta/spinach or cheddar/tomato)
Jacket with cheese or cheese/beans
Lentil soup/dhal with toast or naan

Breakfast is porridge with fruit.

Lunch is usually omlette/ peanut butter on toast or melted cheese and tomatoes on toast.

Snacks, fruit, rice cakes, oaty bars, corn snacks etc.

It's dinner that's the problem.

Risotto
Veggie chili (mild)
Veggie curry (sweet potato or butternut squash are really good)
Veggie lasagne (lentils)
Tomato and Veggie pasta sauce (blitz the veggies so he can't see them) - can use as pasta sauce or topping on a pizza.
Macaroni cheese (can blitz cauliflower into the cheese sauce)
Fritters
Veggie muffins

These are our favs. Obviously portions need to be suitable for his age and to minimise choking risk.

Homemade pizza.

Eggs with chips and peas.

Pancakes with peanut butter and chopped fruit. Can make the pancakes yourself with egg, flour and banana to cut UPF.

Chickpea curry with coconut milk and rice.

Tomato lentil pasta sauce and spaghetti with homemade garlic bread.

Soups are the best thing to disguise lots of veg and pulses in. You just have to blitz it down very fine - my fussy son freaks out at the barest hint of a carrot or onion and then will only dip his bread at that point.

If he likes pasta, you can leverage that and add variety to the sauce to balance nutrients. Some vegetarian options that my kids love:

  • lentil Bolognese (tomato sauce, chopped onion, canned lentils, olive oil, a pinch of black pepper and dried sage to make it interesting)
  • courgette carbonara (beat an egg with finely grated hard cheese, then mix through freshly drained cooked pasta and sauted chopped courgettes. The heat from the pasta will cook the egg slightly and melt the cheese, making it very creamy. Careful not to scramble it)
  • cauliflower Mac and cheese (like the traditional version, but blend boiled cauliflower with the cheese sauce)
  • soft boiled broccoli stir fried with garlic and olive oil, mashed into a sauce
  • tomato, aubergine, basil and ricotta sauce (peel the aubergine and dice it finely to disguise it better)
  • courgette pesto (blend cooked courgette with basil, hard cheese, pine nuts, olive oil and garlic)

Other options that are not pasta and go down well are:

  • butternut squash risotto
  • butternut squash and chickpea coconut curry (made very mild) served with rice
  • butternut squash, red lentil and sweet potato soup with toast
  • bulgur wheat with finely chopped sauted vegetables mixed through
  • egg noodles, stir fried with garlic and soy sauce, broccoli,carrots and onion. You could add an egg while you still fry for extra protein.
