Suggestion for veggie main to go with dauphinoise potatoes please

I'm going to be cooking for a crowd of 10, one of whom is veggie. My menu is:

  • Roast aubergine and tomato soup with aoili
  • Roast sirloin with dauphinoise potatoes and a green salad
  • Poached pears with some kind of cream/ice cream accompaniment.

I'm very happy to make my veggie guest an alternative main course to replace the beef, but have run out of inspiration. I considered roast cauliflower steak, but they always look a bit sad. However, I'm happy to be told I'm wrong!

Any suggestions gratefully appreciated. I don't think my guest eats fish, so veggie only please. Bonus points for things which can be prepared in advance. Thank you!

Veggie pie, nut roast...I think it needs something with some texture to go with the potatoes.

Some kind of stuffed butternut squash?
Or pulled mushrooms? Though they don’t tend to look very pretty!

Three courses is a lot of food and I wouldn't go for a main with any carbs in it. If I was the guest I'd like some roast peppers and halloumi with the dauphinoise, but it would probably be best to check with them directly.

Stuffed peppers.
Aubergine Parmigiana topped
with cheese and torn up bread drizzled with olive oil and baked.Then you have some texture.
Mushroom en croute.

An individual Fennel , olive and tomato gratin with a light breadcrumb parmesan and pine nut topping ( actually though id make a big one to share because everyone will want some !) BBC food has a recipe.
( Chicory is also a nice substitute for the fennel)

Yeah … I’m pescatarian and would only be interested in dauphinoise potatoes with something fishy. Pretty much all my vegetarian meals (aka normal everyday eating) starts with beans, split peas, lentils. Maybe quinoa. The potatoes dish just wouldn’t have a role there. Would it be impossible to rustle up a one pot wholefoods type of thing for them instead? Otherwise they’ll miss out on a proper protein element.

Essentially, non-meat meals have a different structure!

I agree, something with some texture would be my preference. It might be old school, but I love a nut roast. Or Glamorgan sausages, they're relatively easy to make.

I have made this roasted mushrom dish to go with dauphoise potatoes and it worked really well.

It's simple but very tasty and the mushrooms are chewy enough to give good texture variation with the potatoes.

It sits comfortably in the hole where the beef is not, if you see what I mean, whereas dishes with pastry are IMO too standalone in their own right to sit well with a potato dauphoise which is also a filling almost standalone dish.

Trust me, I've done exactly that with the recipe I just shared and some green veg (proabably either french beans or sauteed spinach, was a while ago) and it's absolutely a satisfying meal.

I think the spuds are a wintery thing - I wouldn't want summery vegetables such as peppers or aubergine with it.

I like a nice lentil loaf. Sounds a bit dull but you can make it more or less special depending on what you add to it, and it's so easy.

Macsweens veggie haggis is basically nut roast that you don’t have to make, just slice and fry. Serve with veggie gravy. Yum!

Thanks everyone, this is super helpful. I will double check on the fish, but I am aware of the lack of protein. I wonder if anything with pastry will just be too heavy (although I'm not averse to double or triple carbs myself!). @VanCleefArpels can you or anyone else recommend a good variety of veggie sausages? A lentil loaf might also be a good shout. Will also look into @OooPourUsACupLove 's roasted mushrooms.
