Butternut squash: Cook and then peel, or peel and then cook?

your best tips for this please, was just going to roast it and serve with pasta and broccoli and a light sauce.

ages since i cooked one though

I have an easy way of getting the peel off beforehand if anybody is interested It is definitely easier to get the skin off once it's cooked (MamaG, you don't use a peeler, you just pull the skin away with your hands and it comes away easily).

If you ever do attempt to peel one before cooking it make sure you wear safety goggles.

i had no idea my thread would be so well attended !! i am now a definite cook then peeler... it came away so much more easily after cooking

if you put it in a bowl of boiled water for ~5 min it will peel fairly easily when raw (you may need to balance something on top to stop it floating). Also works for pumpkin.

m & s did butternut squash in ready to cook form recently, wonder if they still do.....

I cut it in half, remove seeds and membrane, place in roasting tin flesh side down, add about an inch of water and roast for 40-60 mins, then scoop out lovely soft flesh.
