Dips that scale easily for a crowd and can be made well in advance

Dips are to be my contribution to a buffet where everyone has been asked to take something. There will be 20 -25 people. (Dips will be served in bowls with spoons for people to spoon onto their ownplate, I know MN tends to frown on dips for groups).
I prefer to make my own than buy. I will need to make them a good few hours in advance, probably in the morning, which will affect the choice.
I usually make guacamole but even adding lemon juice and leaving the stone in, it does tend to turn brown after a while, so I’d rather not risk that.
I don’t want to be fiddling with skinning red peppers for my usual red pepper dip, and the jars are quite pricey.
Not sure I’ll have time to roast aubergines for babaganoush.
Tsatsiki is another favourite but even salting and draining the cucumber it can become watery after a couple of hours.
I’d like them all to be vegetarian, they don’t need to be vegan.

I’ve got as far as:
a flavoured humus (curried maybe) as the ingredients are just chucked in the blender and job done.
Sour cream with garlic and chives (or maybe Greek yoghurt would work?) as that is just a ‘mix everything together) and I think it goes well with other usual buffet items.
ive made a tasty butter or cannelini bean dip before, again just whack everything in the blender, but that is a bit similar to humus. Could make instead maybe.
So these are the sorts of things I mean but am sure you clever people can come up with more interesting ideas!
Summary of requirements:
quick to make in large quantity
keeos well when made ahead
vegetarian, but not vegan.

Not for the health food crowd but a packet of French onion soup mixed into as much sour creme as it can hold is delicious and interesting

I love the sound of this. I have a friend who always puts out a tub of Philadelphia with a bowl of crisps to dig into the cheese with - ridiculously simple but surprisingly gorgeous. Emptying it onto a plate and drizzling with sweet chilli sauce is such a good idea, it elevates it and is more crowd friendly. Said friend will be at the buffet so that will gi down well, thank you.

It might be nice if you can whip up the Philly a bit, get some air into it, makes it feel a little bit more “special”, then pour a nice chilli sauce over the top either just before you leave or take some with you in a little tub and do it when you put it out. I’d also recommend a nice salsa. You can make a finer chopped one or make it a bit chunkier. If you’re making hummus, you could make enough for two and do the curry one and then maybe a nice caramelised onion one or a Smokey paprika one. Although you don’t want to buy anything, there is a brand (that I can’t remember, but I think we have got it from Tesco before) that is just mashed, but still quite chunky, avocado with nothing else in it. You could get some of that, transfer it to your own container on the day, maybe as the last thing you make, and add some lime, garlic, chillies, or whatever it is you like in your homemade guacamole and it won’t go brown.

Yes, I’d second that. I use the clingfilm tight on the top of the guacamole/plain mashed avocado and it doesn’t go brown.

Beetroot, sour cream (or plain yoghurt) cumin. Surprisingly delicious and keeps for days.

Not sure why I hadn’t thought of salsa! I like that it provides colour too. Does anyone have a favourite recipe they could link to please? I can google and will have lots of recipes in books but am always keen to hear other people’s tried and tested.

I make mine up as I go along but;

Tomatoes-depending on how runny/chunky, cook some(air fryer, oven or frying pan) until scorched and soft-I cook a higher number than I dont cook as I like my salsa 'wet/sauce' rather than chunky. Leave the rest raw and finely chop, removing seeds.
Red onion, I use half of a large one per 6 tomatoes.
Coriander or basil-small handful of leaves per 6 tomatoes.
One garlic clove again per 6
Squirt of lemon juice again per 6
Pinch of salt
Pinch pepper
One chilli pod chopped or Pinch of chilli powder/flakes depending on how hot or mild, this is just to taste.
Blend all ingredients into a liquid aside from chopped raw onion/tomatoes.
Pour liquid ingredients over dry ingredients.

Taste and add more chilli/salt etc as required.

If you're me, eat entirely of results with crackers and moan that your insides are on fire for the rest of the day.

A good cheat for guacamole is to mash avocado and just add some salsa to it until its the desired colour/flavour.

The easiest is to empty a block of Philadelphia onto a plate and pour some sweet chilli sauce over it. Delicious
