i love coronation chicken in a baked potato

equal-ish amounts of mayo and natural yog, some mango chutney ( i like quite a lot) and some curry powder. enjoy!

stir fry with veg and rice

pull all the meat off the bone, stir fry with garlic and spring onions and ginger, add carrots and mange tout, soy sauce, coconut milk and cornflour to thicken the sauce, maybe some chillie and coriander, will take minutes.

chop it up chuck it in a pan with a tin of tomatoes, chopped onion, garlic, some chozio sausage, 1/2 chopped pepper, 1 tablesppon paprika and 1/4 pint of chicken stock. Boil away for 20 mins then serve on a bed of rice.

Leftover Chicken Curry:

  1. chop 1 onion, 2 celery sticks and 1 green pepper and soften in oil
  2. add cooked chicken
  3. Add 1 tsp of curry powder, ginger and turmeric and 1 tbsp of plain flour
  4. cook for another minute stirring well
  5. slowly add 1 pint of chicken stock

let sit for a few hours and serve with rice and naan-gorgeous!

Chicken Pilaff

Shred left over chicken

Take a packet of fajita (smokey barbeque) powder and sprinkle half of it over the chicken and leave for 20 mins or so.

Make up some rice.

Fry off a chopped onion, pepper, mushrooms and whatever else you may have (I used courgettes and peas aswell last night), once all of it is softened, add the chicken until heated through and then add the rice stir it all together.

I usually have the rice doing in the microwave and then by the time the stuff is ready in the frying pan, the rice is cooked.

Chop up and mix with a tin of Campbell's condensed mushroom soup. Add leek, bacon and a splash of white wine. Serve with pasta, rice, new potatoes or jacket potato.

chicken pie

  • frozen pastry
  • whatever veg you like: we favour onion, garlic, red peppers and sweetcorn
  • fry what's necessary, sprinkle on some flour, add some chicken stock (you DID make stock from the carcass didn't you?) to make a bit of a sauce; add a bit of cream if you like/have some aroudn
  • add you haven't put in yet and get it all hot
  • shove it in a pie dish, roll out a top and pop it on, cook until pastry done (quite hot oven about 15 mins)
  • give leftover pastry to DS to make things - little jam tarts, pastry shapes to cook, whatever

glad you liked it franch. Tis my favourite, also you just bung it in and only takes 20-25 mins to cook. Fab stuff. A lady at my slimming world class gave me the recipe the other week.
