What are your favorite ways to sneak vegetables into desert?

Our whole family has a sweet tooth so I am constantly looking for low sugar treats that satisfy. Which is why I love cakes with vegetables as they are 'juicy', but also have fiber and an extra nutrient kick.

I recently made these soft cookie cakes with a chocolate frosting, that use zucchini to help keep each to a single serve size.

Any other ideas?

Ooooh yum!

Havent tried it yet, but keep hearing good things about grated beetroot going in a brownie. I’m not really a fan of beetroot anywhere but may give it a go and see - they look more fudgy than my gazzilion calorie ones 😂🫠

The point of dessert is that it’s a treat.
vegetables don’t belong in dessert!

I don’t think fruit does either unless it’s covered in chocolate 😅

Me neither. I can offer one tip:

Knowledge is knowing a tomato is a fruit. Wisdom is not putting it in a fruit salad.

joe Wicks has a recipe for beetroot chocolate cake with avocado chocolate frosting. The frosting was suss and I wasn’t hugely keen but the cake was immense and could not tell there was beetroot in it. It was lovely and moist.

Part of me thinks that putting a bit of veg in a dessert is not going to even out the calories of the other ingredients, even if you are going for the low fat option. Far better to disguise veg in savoury dishes, such as sauces etc?

Now I was thinking of which veg would be less likely to be snaffled and eaten by my camel. 🐪 Haven't decided yet!

Carrot cake is delicious but the inclusion of carrots doesn't make it 'healthy'. I don't see the point in hiding veg in dessert. It's fine to use a veg as a main ingredient like carrot cake but hiding spinach in brownies?! Why??? Gross and pointless

I am not a fan of carrot /courgette/ beetroot cakes. I've tried them all and its just not me.

What I have found aids with the sweet craving is Almonds. Plain/toasted. At times if feeling flush caramalised.

Yoghurt with fruit - I strongly disagree that fruit doesn't beling in dessert but then I also add them to main meals.

Oddly liquorice as well. The soft sort you eqt much less of it but it satisfies that sweet craving.

Mint or peppermint tea

You keep saying zucchini - are you in the US? I thought zucchini meant courgette but I’ve just googled to make sure.

I totally know what you mean, but usually if you include vegetables it means you can reduce the fat and sugar content while increasing the fiber, the result is lower calories and a more steady sugar rush and less of a sugar crash.
I also think butter frosting is OTT and personally prefer cream cheese or yogurt frosting. But each to their own indeed!

Not for health but I make a lovely courgette and lime cake which is super light. Carrot cake is a big favourite too. I don’t think they are healthy though. Lots of free apples at the moment so am making strudels and apple and cinnamon flapjacks.

I'm Australian, but live in Europe. Weird, I thought courgette was from the US because usually we take all of our words from the UK..
