I don’t suppose anyone has this recipe saved anywhere? It’s the one with coconut milk, tinned tomatoes and a handful of spinach at the end. It’s disappeared off the website and it was a family favourite :( I don’t need suggestions for similar thanks, just hoping someone has this somewhere! Thank you.

Surely if it's a favourite you've made it plenty of times and know what to do?

Dullmary · 15/09/2025 16:21

It’s not that one, no but thank you. I do remember everything apart from how much stock and lentils to use. It has 1/2 teaspoon of mustard seeds, coriander seeds and cumin seeds ground, 1 teaspoon each of garam masala and turmeric, 1 tin of coconut milk and one of tomatoes, and ginger and garlic. But just can’t remember the lentil / stock ratio.

Ask chat GPT to work out a ratio for you, my husband grew up on Indian food and I make daal all the time, I just fire it in roughly and add extra water if I need to

Thank you, I’ve already done that but it doesn’t look quite right. I was just hoping someone might have saved it but I’ll give it a go. :)

Quick and easy red lentil dahl. Super easy and super simple. Vegan and guten-free too.

Ingredients
Nutrition
2 Onions, diced
3 Garlic cloves, chopped
1 tbsp Ginger, peeled and grated
1/2 tsp Chilli flakes
1/2 tsp Cumin seeds
1/2 tsp Coriander seeds
1/2 tsp Mustard seeds
2 tsp Tumeric
1 tsp Garam masala
200g Dried red lentils
400ml Coconut milk
400ml Chopped tomatoes
500ml Vegetable stock
2 Handfuls fresh spinach
Squeeze of lemon

Method
Step 1
Heat a glug of oil in a large pan over a medium heat. Fry the onion gently for 5 minutes. Add the garlic, ginger and red chilli and cook for a few minutes more.
Step 2
Whilst that is cooking, grind the cumin, coriander and mustard seeds lightly in a pestle and mortar. Then add to the pan, along with the turmeric and garam masala and cook for 1 minute until fragrant.
Step 3
Add the lentils along with the tomatoes, coconut milk and stock, then stir to combine. Season with salt and pepper and cook on a medium/low heat until thick - at least 15-20 minutes (stirring often so that it doesn't stick to the pan).Taste and add more chilli if desired.
Step 4
Add a squeeze of lemon juice and the handfuls of spinach. Allow the spinach to wilt and then serve with your chosen accompaniment.

I use 100g lentils to 500ml stock if that helps though I use creamed coconut and no tomatoes in my recipe. You can tweak it anyway

AllTheWatersTurnedToClouds · 15/09/2025 16:37

i make the same one OP and yes the 200g lentils to 500ml stock as posted above is correct.

FallingIntoAutumn · 15/09/2025 16:40

I know the one! I looked for it last week online and couldn’t find it so winged it. I thought I was going mad.

I’ve just thought I might have printed it out

FallingIntoAutumn · 15/09/2025 16:42

Oh just seen someone else has posted it! Well done!!!

i didn’t have it printed out, it’s a chickpea one I’ve got printed out instead

CalzoneOnLegs · 15/09/2025 17:02

@Dullmary i have that bookmarked but I can see someone has already helped, it’s better than the ‘other’ recipe. Future just remember the ratio of 200g lentil 600ml liquid. 3:1 ratio

TheCurious0range · 15/09/2025 17:12

Well thanks to this thread we've gone from having seabass new potatoes and green veg for dinner to seabass, dhal and tenderstem broccoli with some naan on the side. Kitchen smells lovely!

@Iheartmysmart thats a nice website

There’s some nice recipes on there. DS went through a vegan stage a few years ago and that was my go to website.

If it exists, I can usually find it. 😀

Sophielagirr · 21/10/2025 10:42

Thank you SO MUCH to the op @Dullmary and to @LadyBugOut for finding and sharing this recipe again. I thought I was going mad as I couldn't find it online anywhere and it is a regular favourite in our household. It's delicious, quick and easy to do. Why has it disappeared?! I am writing it out asap. Thanks again! 🙌

Wow BusWankers, way to be grumpy, unhelpful AND judgemental!
