I mucked up our milk and veg box deliveries two weeks running and we've now got a huge amount of eggs to use up.

It'll be tortilla for lunch, but I'm out of inspiration so any suggestions for things that require a substantial amount of eggs? Ideally something where the eggs are incorporated into a recipe, or can be frozen, rather than something where egg is recognisably the main event, because I'm sick to death of them.

An eggy cake? A sauce maybe?

I was thinking maybe lemon curd, but I'm not a fan of meringue so would need some egg white suggestions if I did that

I usually make savoury pizza muffins - great for lunches and freeze beautifully

Almond cake takes loads of eggs. Very adaptable recipe.
6 eggs
300g almonds
300g sugar
1 tbsp flour

Split the eggs. Whisk the whites to stiff peaks. In a bigger bowl, mix the egg yolks, sugar and ground almonds - it will look like very stiff yellow paste. Mix one big spoon of egg whites into the paste to loosen it then fold in the rest of the egg whites gradually. When it looks like cake mix, stir in the spoon of flour. Put in a 23cm springform tin (lined) and bake on low for about 30 mins and keep an eye on it. Put a foil hat on it if it looks too brown too soon. Sprinkle thickly with icing sugar. Its a dryish, plainish cake.

I like it also with an orange zested and juiced in at the yellow paste stage. I also like it with whipped cream with a bit of icing sugar and a bit of Cointreau whisked in.

You don’t want to do anything properly nutritious with eggs.

An excess of egg is a problem I know well! I have 15 laying hens and only me and DD in the household.

If you have a really good high speed blender you can easily make lemon curd without any faff.

As others have said eggs do freeze well. I find it's best to freeze eggs and whites separately.

Angel cake uses loads of eggs.

Quiche and egg muffins are my go to as they freeze well.

Carbonara with homemade pasta.

Left over egg whites are great for cocktails.
