How to make delicious creamy porridge

WickedElpheba · 28/08/2025 09:59

I love porridge, often just with some brown sugar and maybe syrup, less often I'll have some crunchy nut cornflakes on top..

I know how to make porridge in a pan or in the microwave but I'm looking for tips and tricks to get it creamy and delicious. I like it milky rather than thick and "dry" and I try not to boil it as I don't like the texture it gets but if it's not I'd it's not cooked for long enough then the oats stay a bit hard.

Any tips?

Slow cooker. I use steel cut oats, 1/3 cup oats, 1 cup water plus an extra splash. Some salt. I have a 1.5 litre slow cooker. On high until it’s done. I couldn’t tell you how long. But I don’t like it too creamy.

Perhaps use more water than I do and cook on low for 6-8 hours. DM used to cook wheat meal porridge in the oven of our wood stove overnight. Usually it was lovely - sometimes it needed crushed weetbix added to get the right consistency. Far out, that tasted good.

Second this. Slow cooker. I use gold top milk....

Use full fat milk (splash of cream if you have some). I don't like it too creamy so I use steel cut oats (soaked overnight) and then cook on the hob for 20 minutes or so with water. I tend to make a few portions for the fridge and then heat some up in the week.

Put in more liquid than you think, and add more if you need it. If you are cooking it in a pan then you need to stir it to break up the oats a bit.

Add cream! Just a small amount really makes a difference.

JohnLapsleyParlabane · 28/08/2025 10:22

Cook low and slow in a pan. Use more milk than you think. And stir almost constantly.

WickedElpheba · 28/08/2025 14:29

I only use milk at the moment, never water, and didn't think to use the slow cooker!

When I say "creamy" maybe I mean milky. I like it somewhat liquidy not thick.

Steel cut oats, full fat milk and serve with Greek yoghurt (the proper stuff). I also like it with brown sugar sprinkled on top but even better is coconut sugar (which is dark and treacly in taste). I serve with a sprinkling of nuts/seeds too and a little cold milk to finish.

I've never had it but when I used to buy Quaker Oats from McDonald's I asked for it to be made with extra milk because I liked it milky so it almost tasted like ready brek and not thick and solid

You need proper oats not instant ones. 1 part oats, 2 parts liquid, but possibly more. If I'm making it I put it in the pot on the stove and leave to soak if I can for a bit and no matter what, it's on the lowest lowest temperature, stirred regularly. It needs time to really soak up the liquid.

Shirtstop · 02/09/2025 11:03

I thinknit needs cooking longer than you think. When I'm in a rush I can get "cooked" porridge done quickly, but it's much better if I simmer and stir it another 5-10 mins.

It's best done in a pan, but the same applies in the microwave. 4 mins makes better porridge than 2.5 mins. Use plenty of liquid and a big big bowl!

Does anyone know, if you do overnight oats can it then be cooked quickly in the morning to make nice porridge ?

DD loves porridge but has to leave very early for school so looking for a way to make proper porridge quickly.

AmoozzBoosh · 02/09/2025 11:20

In a pan, over a slow, low heat with semi or full fat milk and cream. Splash a little cream on top to serve.

Won't do you'd arteries any good but will fill you with joy

Talipesmum · 02/09/2025 12:45

Sounds like you just need to add more milk than you have been doing. I always add a little at the end as well as it keeps cooking and firms up as it sits there (also if you put brown sugar on the top then add a splash of milk it helps it dissolve into sugary goodness over the top ❤️❤️)

BarbaraVineFan · 02/09/2025 12:48

Use oat milk! It makes it really delicious :)

muddyford · 02/09/2025 13:12

The best porridge I ever made was with medium oatmeal ( not rolled oats), soaked overnight then gently cooked the usual way.

WickedElpheba · 02/09/2025 19:25

Thank you
I think you're all right that I need to cook it for longer and maybe use more milk!
