How to keep block cheese mould free

Have some cheese which opened about 14 days ago. Half the pack left, dated 1st Oct and bits of mould. I keep the cheese in the pack with a food clip as close to the cheese.

Maybe cut into sections and freeze if you don't use a whole block? Does the packaging say how long it should be kept for after opening?

I wrap the cheese in kitchen towel and put it in a tight sealing Tupperware type pot. It lasts for weeks.

We find it keeps best long as you keep your fingers from touching the uncut part of the block. It's possible to slide the cheese out of its packaging, slice off what you need and slide the rest back inside, using the wrapper as a barrier between hands and cheese. The mould seems to start at fingerprint spots 😎

What sort of cheese? Some keep better than others.
I transfer hard cheeses such as cheddar, parmesan into tupperware boxes - keep for ages.
Soft & blue cheeses don't last long in my home anyway !

If it's a hard cheese like Cheddar or Red Leicester, just slice the mould off. It's only on the surface.

I must have a household of mice as we have never had a block of cheese hanging around for as long as 14 hours days.

We always put into a decent quality small sandwich bag (Ikea ones or similar), close with a clip it tightly and put in fridge. Rarely have mould issues. check your fridge is cold enough as well as when our fridge went wrong we had mould issues with various foods.

I keep mine in the wrapper but fold it over really tightly then wrap it in cling film as tightly as I can ! I also try to avoid touching the actual block so just pull the wrapper back enough to grate or slice what u want holding it through the wrapper !

We put ours in a glass tub which has a clipped lid (like Tupperware but it’s a glass box). It keeps really well in there.
