Has anyone made Ganache?

It looks incredibly easy.. but is it?

I'm looking to make some chocolate truffles for gifts in the future as they're cheap and look really great... so is the ganache bit easy to make?

Incidentally; what's a "rolling boil" when talking about cream?

Rolling boil is where the cream is heaving in the heat but bubbles not bursting IYSWIM.

Truffles are a really fab prezzie to receive

I make it by just microwaving cream and chocolate together, mixing then letting cool before rolling into balls.

Really easy.

yes I have, it is dead easy

break choc into bits
heat cream (exact boiling point not v important IME, just don't let it boil over)
pour cream over choc
stir well
leave to cool
chill

My dd made truffles using honey instead of cream to mix with the melted choc, and a few spoonfuls of strong coffee. they were lovely.

I saw a bloke make some on the Sky programme, Taste the other night - they looked SO good (were rolled in chocolate before rolling in the last lot of cocoa!) so I think I'll give it a go when we're back from holiday

They are really easy to make, and freeze well too. Add some rum or whiskey to them and coat some in melted dark, milk or white chocolate, some in cocoa powder and some in finely chopped nuts. It is a bit messy though, but worth it.

Does anyone know where to get teeny paper cups to put them in? (I'm thinking for gifts of getting favour boxes from Hobbycraft etc and decorating them)

you can get petit four casrs in tesco 65p for 100. They aren't the nice shiny ones but they are ok.
