Chorizo Recipes, please?

Help, foodies! I haven’t eaten chorizo for about a million years and that was in a restaurant, however, I made a recipe yesterday with chorizo in - but now have a good half of the posh U-shaped chorizo left over. What do I do with it?

Any recipes or ways to use/eat would be great. They don’t have to be posh. I just haven’t got the faintest idea what to do with the rest of the chorizo.

NB - fussy DCs won’t eat exactly the same recipe again, so I need something slightly different (they’d be ok if it was similar, just not the same as they’ll moan!
My original recipe was chorizo with cherry tomatoes fried and stirred into pasta with some single cream and spices.)

Any ideas at all (evening meals, lunches) would be very welcome 😊 TIA

This is a firm favourite in our house. We don't bother with the smoked salmon, and just do some roast salmon

Also, a tip: cut the skin off. If you snip into it with kitchen scissors, it peels off satisfyingly. Then chop and fry for absolutely ages and you get deliciously oily loveliness.

Boil and slice new potatoes. Peel and slice the chorizo into coins. Fry the chorizo till starting to crisp. Remove and then fry the potatoes in the chorizo oil until crispy. Add back the chorizo, and halved cherry tomatoes. Once everything is hot, add a bag of rocket and toss through. Finish with a squeeze of lemon.

I love just fried chorizo, fried in its own oils so nice & crispy…also goes really nicely topped on a bed of leaves, cherry tomatoes & cucumber with homemade sweet chilli & mayo dressing. Absolutely delicious! I’ll also sometimes add chicken to the salad too.

chicken & chorizo paella is always a hit in our house also!

oh also a recipe from bored of lunch is chorizo, sweet potato topped with a poached egg with chilli & garlic butter…random but works!

also a chorizo & halloumi omelette is delicious…

I’m now getting hungry😅😅

This is one of my favourites. Use tin butter beans and any chorizo (not sliced). The wine reduces down to add a really good flavour. It's a brilliant autumn/winter stew and for my bean hating dc I just take a portion of the chorizo out before adding the beans and make hers with pasta.

Jamie Oliver’s chorizo carbonara, but we add cheese because why not Grin we have it loads and it’s so quick and easy. Fry chorizo, garlic, rosemary and chilli. In a bowl mix 2 eggs, juice of 1 lemon, loads of natural yoghurt and some grated cheese. Mix pasta through chorizo mix then stir through the sauce and let it warm gently. Yum!

Chick pea and chorizo tapas.

Fry garlic and onion til nearly cooked, add chorizo and fry an extra minute. Add a cup of red wine and some ready cooked chick peas. Reduce until half the liquid is gone. Season and add fresh parsley (You can add any other herbs/spices you like when reducing e.g fresh thyme, paprika…) Serve with crusty bread

I do Nigellas chicken and chorizo a lot.

I had the best dish of fried octopus with chorizo on hummus in Spain. I now throw air fried chorizo and any fish or seafood over hummus and it works brilliantly.

Make pork chorizo and butterbean stew almost every other week! Originally about 15 years ago in bbc somethingfortheweekend by Simon rimmer.

i also use left over chorizo to roast with sausages and veg (peppers courgette etc) and in a paella.

Chorizo quesadillas - fry little cubes of chorizo with chopped red onion, mix with grated cheddar, chilli, chopped coriander and sandwich between two tortillas. Fry on both sides till crisp and cut into wedges - serve with sour cream, guacamole and salsa!

I make chorizo mac and cheese, sliced as pizza topping, chorizo and king prawn pasta, chicken and chorizo orzo pasta bake, chicken breasts stuffed with chorizo and mozzarella and wrapped in bacon or parma ham, sliced in a paella, chorizo and red wine tapas, chopped finely in spaghetti bolognese or lasagne, sliced as part of a charcuterie board, cauliflower, cheese and chorizo soup, eaten in slices when I want a snack. In fact, there is never a time when I don’t have a chorizo ring in my fridge, as well as larger slices for ham and chorizo or cheese and chorizo sandwiches.

Spaniard here! When we have leftover chorizo we usually make an omelette (we chop it, sautee it, then make an omelette with or without some grated cheese).
