I've got a huge bunch of coriander leftover would like to make a chutney but one that will keep a couple of months rather than a couple of days.

You could always freeze it - in ice cube trays.

https://contentkitchen.com/yotam-ottolenghi-nice-man/ and this looks ace. I'm just placemarking really as I've got a massive bunch of coriander to use up too.

That looks fab, I've also got loads of tomatoes from the allotment so will give it a go.

The Dishoom coriander mint one is very spot on for what you’d get in Mumbai. We tend to use it up in a few days, but I can’t see why you couldn’t freeze it. I freeze chimmichurri sauce, and it’s very similar in terms of ingredients.

A fresh, slightly spicy chutney and Dishoom favourite. Serve with barbecued meats and grilled vegetables - perfect for your Summer BBQs.

A chutney with sugar in it and cooked will keep. It’s preserved - like jam. Just whisking up fresh ingredients is lovely but it won’t keep for obvious reasons. There’s nothing in it to preserve the ingredients. You can use mangoes to make a chutney that lasts and is better after 2 months!
