Pork chop cooking instructions

Currently staying with (young adult) DD. She decided to make pork chops for us yesterday - not sure if she has cooked them before. We all agreed that they were a bit overcooked and dry. DD said "I followed the instructions on the packaging: 1m 30s each side in a hot pan and then 15 minutes in the oven".

So let's have a look at the instructions (see attached image, when it gets through moderation). The text says only to cook 1m30s each side in a pan and then rest for 7 minutes. It doesn't say to use an oven at all.

I would argue that the text is complete, and the bit with the oven is just an alternative (skipping the pan). DD argues that the diagram says to do both. I think that in that case, the text ought to say that too. She says that the diagram ought to be the definitive version because people don't have time to read all of the text.

While I think I'm probably right 😎, I think she has some good points. The text ought to match the diagram. If the oven is indeed an alternative to the pan, the the text should say "Either X time in a pan, or Y time in the oven".

That said, I would feel more confident in my position if it was more than 1m30s per side, which seems rather short. I'm not afraid of slightly pink pork, but with the bone in I'm not sure that it's going to be properly cooked in that time. I would do 1 minute each side over high heat and then 2½ to 3 over lower heat.

Here's a poll. Please answer based on what you think the instructions mean, not on how you would cook pork chops. 🙏

You can’t cook an actual pork chop in 3 mins in a pan! Must be both.

Those instructions are either not both But agreed 1m30 each side is way too short.

It does of course depend on how thick they are, really thin ones fry in just a few minutes, thick ones I’d always pop in the oven rather than pan fry.

How thick are the chops and do they have a bone in?

Thinnish chops with no or little bone would be done at 1m 30 each side (3 min total) on a high heat .

I think the instructions indicate both methods are to be used. Browning over a high heat and finishing in the oven is a recognised technique. However the timings are totally off.

I normally do 5 mins per side in a pan and 5 resting under tinfoil and they come out juicy but cooked.

The instructions are poor. I think they mean for you to brown the chops and then cook in the oven, which is rubbish because it means twice the washing up.
We had pork chops tonight. I did them in the airfryer and they were delish because I brined them beforehand.

I think I've worked it out!

The text does say to use the oven as well as the pan, if you account for the line that is placed between the pan graphic and the oven graphic ("Place on a baking tray in the centre of a pre-heated oven").

The problem is that because that line is on a white background, it looks like it's part of the graphic panel. Someone (like me) who is just reading "the instructions in words" (i.e., the text that starts and finishes on a grey background) could skip the oven instruction because "it's part of the graphic panel", and miss it. I think this is poor design/layout.

Now we are just left with what the timings ought to be. In answer to PP's questions, these were decent thickness pork chops, 250g each with the bone. But 3 minutes in a hot pan and then 13-17 at 200° strikes me as much too long.

Yes I think you’re right.

And yes it’s too long. But packet cooking instructions for meat are always too long IMO. They’d rather everyone had overcooked meat than risk one person getting ill from undercooking it.

My DM cooks pork chops in the oven and they come out like old, leather shoes.

I fry them in a boiling hot pan, about 1.5 mins per side and they always come out deliciously moist with a bbq crunch.

It gives two sets of instructions. One for pan frying, and the other for oven cooking. You choose one or the other, not both.

I wouldn't cook pork chops like that anyway, they are too tough if cooked quickly. Place in an oven dish on top of some sliced onions and pour in a little apple juice. Cover with a lid or foil. Cook at 170 fan for about 40 minutes, checking part way through and if the apple juice is evaporating, add a bit more. Take the lid or foil off for a few minutes at the end.

It’s 2 sets of instructions, one for pan frying and one for oven cooking, but pan frying is the recommended method hence why that’s what the text indicates. Pig farmer here, we cook a lot of pork chops! But I agree that the 1.5 minutes per side seems short, but I doubt much thought has been put into it.

I agree with the above. I’d cook them in the oven, 30-40 minutes or so, not super high, well basted for thick bone in chops.

I wanted to phone Tesco's customer care line, but although the number can still be found via Google it just says "There's no service here, please go to our website". And on the website there is no "Have a query with one of our products?" number, nor a chatbot. They also have a Twitter account, but that hasn't posted since December 2023 and the DM bot wouldn't put me through to a human. So apparently Tesco just gave up on direct customer care. 🤷‍♂️

They (supermarkets generally. Don't know about Tesco specifically) sometimes put contact info on the till receipt.

Should be a brand standard for a big lable like Tesco

Grey : Optional pre cook and/or common sense (pretrained) raw pork management

White : Then I would expect that each White box has an iconography to show what methods could be used to cook

If I have to do two things I would expect the visual to be numbers or very clear steps.
And would not expect to have to turn in the oven while baking..

Yellow: Cook for this long at heat X to not kill yourself or other

Grey: Post cooked options

The layout and colours need to changed

Grey has pre-cook

And cook instruction

It really depends on the thickness of the chop.

I sear them on each side and on the fat rind for 1 minute to 1m 30s. Then I put them in the oven for 8 minutes for each half inch, so a chop 3/4 inch thick would be 12 minutes. After that I rest for about 5 minutes.
