Got friends over on Friday night after work so will only have a short prep time unless I make something the night before.

The weather is nice here but not super hot.

Any deas? For main and pudding.

Pork / steak stir fry with a packet of stir fry veg with boiled basmati rice on the side. Just need to check the sauce is gluten free.
For pudding, my go to is tiramisu. Use gluten free sponge fingers and good shop bought custard. Dip fingers in cold back coffee, put a layer in a dish. Spread over some custard and a layer of mascarpone. Repeat. Top with cocoa powder. Will sit happily in the fridge overnight.

depending on weather, you can quite easily barbecue or make barbecue-adjacent foods. gf burgers/sausage/lamb kebabs with appropriate buns and lots of salads. if needing veggie as well the stuffed peppers idea above is nice. as a gf person who eats meat and dairy, i always appreciate non vegan gf food!

I would be beyond delighted with pretty much every suggestion above, apart from the barbecue (gf burger buns are not nice, likelihood of hidden gluten in pre prepared marinades or sauces). GF ladyfingers are hard to find but tiramisu would be a dream if you found some, and is usually better made the day before, as is the polenta cake (or Nigella flourless chocolate cake or polenta lemon drizzle)

lots of lovely Thai recipes on Beyond Celiac site, and Becky Excel’s recipes always turn out great

you are a very thoughtful friend for making the effort!

Something served with rice is easy enough, cook the dish Thursday night. For dessert chocolate and almond cake with cream, made with ground almonds

Where have you found GF sponge fingers! I've never been able to find them (for trifle).

Some sort of nice fish fillets - salmon, sea bass, sea bream, cod or haddock loin, cooked however you like it, i.e. fried or grilled or in the oven
Chips (if bought, check they are gluten-free) or wedges, or steamed/boiled baby potatoes, or basmati rice
Green beans or other quick-cooked green vegetable
This sauce - very easy and quick, very good. The herbs can be adjusted to taste. It's a US recipe, hence my attempt to convert cup measurements into UK measurements. You would have to check that the mayo, mustard and stock were gluten-free. If in doubt, some sort of mixture of oil, lemon and herbs, maybe with capers, would be lovely too.

Light lemon sauce with herbs, should easily serve four people with fish

Ingredients
Half a cup of mayonnaise - 125ml or 2-3 tbs
One third of a cup of vegetable or chicken stock - 70ml
1 tbs Dijon mustard or grain mustard
1tbs extra virgin olive oil
2 tbs lemon juice
2 tsp chopped fresh parsley
2 tsp chopped fresh tarragon
2 tsp chopped fresh chervil (I used dried so added less)
Pepper and salt to taste

Method
Place mayonnaise in a small saucepan. Gradually add broth, whisking until smooth. Heat over medium-low heat, whisking constantly, until heated through but not bubbling, about 2 minutes. Remove from heat and stir in mustard, oil, lemon juice, parsley, tarragon, chives, chervil, salt and pepper. Serve warm.

Pudding - cranachan.

So many things! Steak, lamb or pork chops, home made burgers with gf bun?

moussaka/aubergine parm/ratatouille?

Slow cooked lamb or pork?

Vietnamese pork meatballs with rice noodles?

A big fish baked in the oven or smaller fillets of fish with tomatoes, olives, capers in a tray bake?

Served with anything potato based or rice.

Polenta chips are awesome too. Just add hot water and stir the ready polenta on the hob and when it's firm add cheese and olive oil, spread on a dish and when it's cool cut into slices and fry or oven bake till crispy.

Puddings, things like Eton mess or chocolate mousse? Fruit salad with cream?

I make really easy gf cookies using ground almonds instead of regular flour.

I would personally serve risotto for the main and those little meringue nests with raspberries for the pudding. Starter: melon.

I've been gluten intolerant for a couple of years and simple is good!

If it's a guest that's gluten intolerant or coeliac, keep the packets for anything you've used (like stock cubes).
